Anti-candida diet recipes? Help!

I have a friend coming over for dinner on Friday and she just told me she'd on an anti-candida diet. She is also veggie. Which means she can't eat:

Mushrooms
ANY sugars - no chocolate or even fruit
Anything containing yeast (no stock cubes, marmite, soya sauce...)
Wheat
Meat
Fish

So what's left???

Any ideas appreciated. I can always serve her a bowl of nuts and lettuce but it seems a bit of a shame...

Hah!

She offered but I, oh so foolishly, said Nooo don't be silly it's so nice when someone else makes dinner for a change.

Looks like lettuce it shall be then.

I did this diet last year...amazing what you can actually eat, but I'm not veggie.

Can't have dairy either.

I ate lots of brown rice and steamed veg with natural yogurt ont top with salmon or chicken. Obviously you can't do that. Have a look at Erica White's website for recipes..I've lent my book out at the moment.

You could do brown rice with loads of lovely veg cooked in ginger and garlic?

I'd make something simple with pulses (lentils/beans/chickpeas) plenty of vegetables and rice. This is a lovely recipe for an indian-style Chickpea & Spinach Curry..... Serves 2

1 red onion, peeled and thinly sliced
1 clove garlic, crushed
8oz chickpeas, canned and drained
1 x 400g can chopped tomatoes in juice
1 tablespoon olive oil
teaspoon cumin seeds
teaspoon fenugreek seeds
teaspoon mustard seeds
1/2 teaspoon chilli flakes (or to taste)
4 chunks of frozen spinach (about 4oz) defrosted
Salt and black pepper
Freshly chopped coriander leaves
Some natural yoghurt
Brown Basmati Rice

Method

  • Start the brown basmati rice cooking (takes 25 mins)
  • Heat the oil and add the dry spices
  • When the seeds start to sizzle/pop add the onion and garlic. Cook until the onion has softened, stirring occasionally
  • Add the drained chickpeas, tomatoes, salt and pepper and cook for 10-15 minutes, allowing the sauce to thicken a little
  • Add the defrosted spinach and cook gently for another minute or two to heat through
  • Turn off the heat, leave for 2 minutes, then add the plain yoghurt and chopped coriander. (If you add the yoghurt too soon the dish will curdle)
Serve immediately over brown rice.

Do be careful with the tinned toms, on this diet only those without citric acid are OK. Making your own sauce is the best option.

Chili flakes are also not recommended, they're an irritant I'm afraid. It is quite strict!

Cripes, I did this diet (it worked wonders), but can't for the life of me remember what I did manage to eat (used to sob my way round Tesco). I think it was mainly brown rice/pasta and home-made tomato sauce type things (as misssurrey says, no tinned toms - and no tom. puree either). Curry was ok as well, without the chilli.

(Oh, and I fear it will just be lettuce, OP: nuts are out in case they harbour traces of mould...).

I used to make chapattis a lot - just wholemeal flour, water and a tiny bit of salt. They taste like cardboard at first, but you get used to them.
