freezable recipes for the newborn baby phase

Hi, we have a 2 yr old ds and expecting no 2 in 4 weeks. Am about to start maternity leave and am planning a cookathon. Am planing to stock freezer with all the usual suspects, lassagne, bolog sauce, fish/cottage pie, stews, curries etc. Things which are one pots with veg in basicaly......(or a simple veg can be done with eg peas/carrots).
Can anyone help with some recipe suggestions? Criteria, must be freezable/amenable to batch coooking and tasty/healthy..... just don't want to get tooo bored with meal options.

Hi Hettie - if you're a lasagne-maker, then this one makes a nice change. The ragu is made with lamb mince, and then in addition to the regular lasagne sheets, you layer in aubergine slices. I've also successfully layered thin slices of potato into this, when I only had 1 small aubergine. It cooks up a treat and freezes beautifully. (I leave out the allspice as I couldn't get hold of any the first time I made this).
I make up big batches of dauphinoise potatoes, cook and then freeze in small portions. Sometimes it's the accompaniments that do me in.

Hi Hettie - this recipe is also very nice - you don't have to bother with the tomato frito; tinned chopped toms and some added fried onion taste just the same. It's really the chorizo and paprika that make it so nice. Everything else is easily fiddled around with and substituted and I've also just lobbed everything into the slow cooker from raw and it turned out fine

DS1 was born 4 weeks ago and stocking up the freezer was definitely the best thing I did on maternity leave! The winners were chilli con carne (I use the Jo Pratt recipe www.bbc.co.uk/food/recipes/database/chilliconcarne_67875.shtml); beef and stout stew (unbelievably good with lots of mash - www.bbcgoodfood.com/recipes/13349/beef-and-stout-stew-with-carrots); squash lasagne (bit of a fag but if you've the time, worth the efffort - www.bbcgoodfood.com/recipes/67609/roast-pumpkin-and-spinach-lasagne) and cottage pie - using my MIL's recipe.

ooh one pot book- actualy bought it for a friend......may get a copy. fruit tea loaf sounds ymmy, will try and find recipe. loving the sound of the lasagne, will make a nice change from meat. ta very much for all the tips

quiche freezes very nicely and makes a nice change from meat/tomato dishes. i also batch make pasta tomato based sauces with loads of blended veg in, and lots of soups. i work pretty full time and once a week we have soup from the freezer with garlic bread or pita pizza (take 5-10 mins to make). Meatballs are also great, and you can batch roast chicken legs and freeze in meal-sized portions.
