Icing a square cake - how?

Have posted similar but now a different question!

Ive made a small trial run today of my 2 tiered square cake for my brothers 30th birthday and iced it too, which went fine but i found that the corners of the (ready to roll) royal icing kept splitting - why was that and what can i do?

How do you ice the corners?

Many thanks in advance

dont roll the icing too thin. Use a flat smoother to do the top and then gently do the corners but try not to stretch the icing. You almost have to push it back into itself IYGWIM

www.vimeo.com/298002 this is a good video. Better with the flatener but your hand is ok as long as you dont have hot hands

When you have rolled the icing out to the right size, lay the cake on top of the icing and cut the corners out. From the corner of the cake, cut straight down and then at 90 degrees cut out the corner, cover the cake in cooled boiled jam, roll icing up with rolling pin and carefully place on top of cake, then with damp fingers, smooth the edges of icing together.

I hope that makes sense!!

ive got a square one on my profile piccys!

please dont cut the corners as they could come apart, the video is the best way to do it seriously

alypaly · 19/01/2010 23:32

i guess you cou could cut them if you found it easier but the video just shows the best way to do it and then the corners wont seperate if buttercream melts etc

Thanks for replying, alypaly, your cakes are stunning! If mine turns out half as good, ill be delighted - and ill definitely watch that video.

Thanks again

a friend showed me how to do things as she had been to cake decorating classes. Tried it and i was hooked, and never looked back. Humpty will always be my favorite. Made him for DS1. didnt want to cut him up.

I would love to go to cake decorating classes, maybe if they do a daytime on once DS is at full-time school - that would be lovely!

there are some really good books. Once my friend had shown me how to make a flower i just read the books and if you are a bit arty ,they are quite easy to follow

Lindy Smith writes some good books on Cake Decorating. Another good source for ideas is "Cake Craft & Decorating" magazine. They have ideas for all levels of expertise.

Ive got a few of those cake craft & decorating mags, they do seem good and not just for experts (of which im definately not).

I would like to think im arty but time will tell! Ill try to put a picture of my cake on here when its done, thanks so much x
