Need a recipe for a 12inch cake!

I need a recipe for a fairly easy straightforward madeira mixture birthday cake, its for my dh's 90th birthday party.

I reckon I would do it in a 12inch tin, square tin would be easier prob, but any and all suggestions welcome.

There is an alternative approach, which was the one we suggested PRIOR to this helpful customer's input.

After baking a cubic foot of cake in a fortnight, testing to find the right method, we reckoned that the other way to do it was to bake four 6 inch square cakes and join them up under the icing (the only reason for baking a 12 inch square cake would be for a celebration, so it would be iced). You would have four domes to shave off, but it saved the crusty crust. It also saved having to bake any more test cakes which were having a detrimental effect on our waistlines.

I will certainly try this recipe. I have been searching for a Madeira cake recipe for ages. I tried one that I got from another website and it was horrible and it went into the bin - what a waste of ingredients. The recipe for a 12 inch madeira used a mix of plain and SR flour and 18 eggs!! It was dry and heavy and tasted very eggy it was awful. I have never made a cake with both plain and SR flour, has anyone else ever used both and what is your verdict.

Jud291, you should never need to put a cake in the bin. There is no cake that cannot be eaten heated up and served with custard. Spongecakes doused with sherry can always be used in a trifle!

Hi,been asked to bake a 10" sponge cake for a neighbour's 50th anniversary,just tried it in a square tin,3" deep,it came out about 1 1/2inches height,should I try recipe for a 12 inch tin,but cook it in the 10",starting to panic now,can anyone help.
