How do you make chips?

I think my method is the best- but am ready to be proved wrong.

Roasting tray about 2cm deep with sunflower oil, in the oven until hot. Pots (best are king edwards) not peeled, just cut into chip shape.

Chuck them in, after 20 mins pour more oil on top.

20 mins later drain them into a colander.

Put on sheets of kitchen towel, add salt and pepper, dab, then serve.

I par boil mine for a few mins first as I cut them really chunky so they soak up less oil, drain them and sit over pot for a few mins to soak up excess water and then toss them in a few table spoons of oil before putting on a preheated roasting tray - love the satisfying sizzle! Because they are only tossed/coated in a little oil then they don't need drained afterwards and only an occasional shuffle/toss whilst cooking - mouth's watering at the thought. Chips tonight anyone?

I just cut up potatoes into chips, put them in a freezer bag w oil, give it a good shake so they are all covered, then pour them onto baking tray covered with baking paper and into the oven preheated at 200 degrees or more for 20-30 min (move them about with a spatula half way through).

I suspect Devil-woman's are the best - they sound divine.

I do mine as the others but they taste like baked potato wedges rather than proper chips (which I think must absolutely be deep fat fried or deep fat baked!).

My oven has blown up so I've recently made a batch in the deep fat frier (v chunky, good oil). DS has never been a fan of chips until he had those for his tea. Now he keeps asking for them and I keep telling him we've run out of oil/potatoes

Gosh you are all so good. I literally cut the potatoes into chip shape (peeling them for the children), heat the oil in the chip pan and chuck them in until cooked.

I soak mine in water and lemon juice for a few hours before deep frying.

We really like celeriac chips. Heat a pan of water to boiling, throw in chipped celeriac for 3 mins, then tip onto a tray, sprinkle with curry powder, and drizzle over olive oil, then bake til cooked.
