It is so creamy and yummy but fat free
I was wondering if I could use it some sort of chicken sauce made on the hob iyswim

apparently you can...

I use it for making curry creamier - don't add it till the end though or it'll split I think?

According to their website, because they remove all the whey, it shouldn't split, so you can use it in cooking without it curdling.

Try it and see, but I would add at the end

Of course!

it's quite common to give curries a good boil or gentle simmer after you add yogurt
