Sweet potatoes - what do you do with them/how do you serve them?

I'm looking for inspiration! Haven't bought sweet potatoes for years, and can't remember what I did with them when I did buy them.

Any suggestions?

I think I've roasted them in the manner of potato wedges before. A bit of paprika and some sour cream for dipping.

Low GI?

Bake them in their skins like a baked potato then serve with a blob of creme fraiche and some black pepper - Yum!

I make a lovely sweet potato chilli.

Peel Sweet potato and cut into chunks about 1 inch x half inch.
Can add any other veg you like. Make it nice and chunky. I usually add carrots and courgette. Onion works but is optional.
Add 2 tins of chopped tomatoes and 2 tins of any beans - kidney beans, chickpeas work well, (I usually add 1 tin of each) in fact any tins of beans (If you buy East End ones from local shop, rinse them as they are in salted water and they stink, taste fine though)
Add one can's worth of water if doing on the hob, about 1/2 a can's worth if doing in slow cooker.
Stir in 1 teaspoon chilli powder & 1 teaspoon cumin (this is quite mild with a slight kick so add more if you like it spicy) 1 teaspoon cinnamon and about a tablespoon's worth of good dark chocolate (about 70%)
Simmer for about 1-2 hours on a low heat if doing on hob (or until all chunks of vegetables are soft) or cook on high for 6-8 hours in slow cooker. Near end of cooking time add most of a small can of sweetcorn to add colour and a bit of sweetness.

Serve with plain greek yoghurt, rice and a wedge of lime If you make it fairly mild and mix it 50/50 with the yoghurt to take the heat out (and mash or blend if required) babies love it.

Baked and stuffed with smoked mackerel pate, served with salad.

We also love them mashed with loads of butter and black pepper.

I roast in smallish chunks with rosemary and garlic, yummy with just about any meat. I've even eaten the leftovers cold dipped in a bit of sour cream

Only take about 20 mins and no par boiling.

Cut up and roasted in little chunks with rosemary

Baked in the oven like jacket pots

Use as a mash topping like SingingBear

Chop up and use in stews & curries

Like them as chips/wedges, roasted in olive oil in the oven. Also use them as hidden veg for Ds in spag bol as they disintegrate well - Spec if you whizz them up when raw and add the mush to onions at the outset. Nice diced and added to cottage pie, alongside carrots celery etc.

We roast them in chunks with halved new potatoes, parsnips and carrots, with some olive oil, paprika and chilli flakes.

Lovely baked in their skins with creme fraiche, chopped red chilli, coriander and red onion.

V nice in a curry, especially one with coconut milk.

Good in soup.

Chips- either done in the oven or fried. Served with spicy peanut sauce. Mmmmmm. I really want some now, wonder if a swede would make an adequate substitute?

I do a veg soup kind of thing. With onions, stock, grated carrot, a tin of tomatoes and sweet potato. The sweet potato makes the soup have a lovely glossy finish to it. I'm no cook either, but it seems to work and the kids like it.
