ideas for using up red pesto please

... other than my usual which is using with pasta or spreading on pastry &topping with tomatoes & Mozzarella. Thanks.

(Opened jar tonight, if you haven't tried this before, it's simple and we think it's fab: spread chicken breasts with green or red pesto, and top with breadcrumbs; bake)

We dollop it on homemade pizza but I guess that wouldn't be too different from your pastry?

Would it work with salmon?

hadn't thought of pizza, it is a bit different to pastry, thanks! It does work well with salmon (have done the topping with breadcrumbs with salmon too).

Put it on top of some salmon fillets with some pamesan then stick it in the oven or under the grill for 8-10 mins.

that sounds nice too Cobblers! Have most of a jar (only two of us in tonight) so if poss would like to use the rest of it up in one go. Does it work in soups do you know?

thanks Poledra - they are delicious, I've made them before and that's where I got the idea of spreading on breast and topping with breadcrumbs which led to opening the jar tonight! Would recommend! I made these for DD's birthday tea and they were the first things to go!

You don't have to rush to use up the jar - it keeps for weeks in the fridge. Well, a week anyway. It's the oil, innit?

Was going to suggest strips of chicken dipped in it then rolled in breadcrumbs, but I see that's what you had done in the first place, more or less!

I make a very simple tomato pasta sauce for the children which is one onion finely chopped, one clove of garlic, one tin of chopped tomatoes and a very generous dollop of red pesto, simmered until I can no longer stand the nagging for dinner. Can then be served on pasta in its chunky format or whizzed to a smooth sauce for the fussier diner.

I mix some with couscous and roasted vegetables and chickpeas and fresh herbs if i have any). Makes a realy nice healthy lunch.
