any winterish recipes for salmon fillets ??

Using up stuff from the freezer. I have a bag of salmon fillets, which I normally either just bake (in foil), or do with creme Fraiche and pasta type thingy.

I know I can put some in fish pie, but actually don't like it with too much salmon in it.

So anyone got any other ideas for nice comforting warming recipes, using salmon ?

Got a lovely spicy coconut topping - it's in a decades old Good Food mag, give me a mo I'll dig it out.

Just make the topping, lob on top, bake, and yum spiciness ensues.

Right:

Melt 2oz butter, add crushed seeds of 8 cardomom pods and 3 tablespoons desiccated coconut. Stir non stop for 2-3 mins till coconut starts to toast but be careful because when that buggar toasts, it toasts quickly.

Stir in 1 chopped plump (I didn't specify that, they did) red chilli, seeded, 1 tablespoon grated ginger, 2 squidged garlic cloves, 1 teaspoon ground coriander and a generous pinch of turmeric.

Leave to cool, top your salmon with it when ready, bake 200C/G6/fan180C for 13-15 mins.

This also freezes beautifully.

You can scatter on some fresh coriander too.

Oh I had a yummy salmon dish at a restaurant last night, it was with broccoli and penne pasta in a creamy pesto sauce.

Thai style, served with brown rice and spinach.

For two people, fry two fillets whole in sesame/groundnut oil (or cut in chunks if you want it to go further). Remove to a dish when cooked. In the pan, fry thinly sliced onion, garlic, some lemongrass and finely chopped chilli (optional) then add a teaspoon of brown suger and when it's caramalising add the juice of one lime, 2 tablespoons soy sauce and 1 tablespoon water. Let it bubble for a minute or so then pour over the salmon (if whole) or replace the chunks and mix together gently. Delicious, warming, healthy. I serve it with spinach cooked and then mixed with a little greek yoghurt/creme fraiche, lemon and nutmeg and brown rice.

Delicious with ginger, which is quite warming I find.....
