How to cook beef brisket si it's tender with no slow cooker.

just bought a piece only to read it's the tougest cut. how can i cook so that it's tender and tasty? I have no slow cooker. only a casserols. help!

in the biggest pan you can - cover with water (peppercorns, bayleaves etc)

it will take a few hours depending on its size

Pot roast in some stock with veg (onions, carrots etc) for a long time on a very low oven. Basically slow cooking without the cooker.

yes, either in a pan on the stove, or bring it to the boil then stick it in a low oven for a few hours.

Should have said, make sure your casserole has a well fitting lid to keep in moisture during long cooking.

Hi all. Thanks for the replies. I've found a few recipies.

I guess if I sear it and transfer to a casserole dish with some veg, stock and a bit of red wine and cook at about 140 c for three hours it should be ok.

Anyone know what cuts are tasty but easier to dry roast for future reference?

I love brisket, it's my roast of choice!

Make a bucket of tinfoil in a roasting tin, set the brisket in the middle of it, pour in about a pint of water, close up the top of the tinfoil and then roast for about twice as long as you normally would. I usually add at least an hour onto recommended cooking times.

Then you not only get tender meat but yummy, yummy gravy with those little bits of meat floating about in it....

Just realised this is too late to be of any use to you, but I think a well-cooked brisket tops rib of beef any day. And it makes a gorgeous cottage pie the next day!

Hi all,

ive just put my brisket in the oven! i made a sauce from stock, red wine, tomatoes, veg and tomatoes for a yummy sauce.

it's good to know that it can be simpler to cook though with just water or stock.

i will leave to cook for three or four hours.
