what can I do with bananas that are becoming over ripe?

Was thinking of maybe doing buns or a cake?

Normally do a banana loaf but it always ends up too heavy.

Got eggs, flours, and "you cant believe its not butter" got some spices, milk

Cant get out to shops....snowed in.

Any suggestions?

Know it sounds dumb....but how do I do banana porridge? I have got the oats (was gonna do flapjacks) but dont even know how to do normal porridge!

Normal porrige is 1 cup oats to 2 cups liquid (milk or water or a mix) boil for 5 mins and salt to taste.

Banana porrige

I'd eat them mashed with a fork, sprinkled with brown sugar with a dollop of double cream.

Freeze them.
(peel, wrap in cling film). Then, when you want porridge, take banana out of the freezer, put oats in a bowl, cover and a bit more with water or milk, microwave for 3 mins (check every min for first few times while you get used to how much milk you want to use - MIL likes hers sloppy, DS likes to be able to pick his up in his fingers). Then take banana which has now v slightly defrosted, chop up, add to porridge to get instantly not-too-hot porridge.

Yum. Porridge tomorrow for breakfast. That'll warm us up!

hummingbird cakes - they're FAB! have you pecans and some pineapple?

bellavita · 10/01/2010 15:50

Peel them, place in foil, sprinkle over brown sugar and slosh some rum over. Make airtight with the foil and bung in the oven on a baking tray for 20 mins - serve with cream or icecream - yummy.

dizzydixies · 10/01/2010 15:53

lordy bellavita - am off to try that tonight

MunchMummy · 10/01/2010 15:53

Wwrap them in tin foil and pop them in the fridge - it'll stop them ripening any further and doesn't make them go too black.

PestoSkiMonster · 10/01/2010 16:20

Baked bananas in rum

(add lemon juice, butter and rum/rum flavouring)

bellavita · 10/01/2010 16:35

LOL! I was going to say banana cake! Never mind, next time!

NorkyButNice · 13/01/2010 22:12

Next time, peel, chop, freeze, then when you have a craving for ice-cream just whizz some up in a food processor.

Instant healthy banana ice cream.

GrimmaTheNome · 13/01/2010 22:13

I do banana porridge in the microwave - mash banana, 30g oats, water and milk to cover, cinnamon, nuke/stir/nuke till it seems done but use a big bowl and watch it like a lynx as porridge has a nasty tendancy to erupt messily.

displayuntilbestbefore · 13/01/2010 22:22

banana custard goes down well with my dcs and it doesn't matter if the bananas are a bit brown because the yellow custard hides them all

alypaly · 21/01/2010 18:59

freeze them and use for banana muffins

alypaly · 21/01/2010 19:00

add some choc drops for banana and choc muffins
