I need 2 new lunches.......any suggestions?

I have

Baked potato with cheese & beans
Cowboy casserole
Ham/bacon sandwiches
Pizza toast
Pasta with cheese & tomato salsa
Chicken Nuggets
Fish Fingers, broccoli & cauliflower

the children are 'off' rice atm & I think I need something maybe veg not cheese

Any suggestions

or fried eggs on toast with crudites to start

Hmm Chicken nuggets are homemade and have carrot cucumber & tomatoes with them

But tea those nights are Mince & mash and sausage & mash

More fish improtant

Fish pie and vegtables
fish cakes - especially tinned salmon fish cakes or fresh salomon if you can
Or a fish chowder and bread rolls
Haddock with a cheese and bread crumb topping and mash pots and peas

Yep fish a good option if those nights are meat based, and also if you are having hot dinners how about just sandwiches? wraps?

Ooooh I know, falafel with pita bread and salad, kids love falafel and it's so easy to make if you buy the packet mix.

most days you do fruit in the pudding except chocolate and blacmange

and crumble is comfort food....

I hate crumble.....which is why I do charlotte

They average 8-10 small portions of different fruit & veg each day - so I thought the chocolate pudding was OK

I'm not to keen on blancmange but I want a mousse but most have raw egg in

Easy Quesadillas-place wrap in frying pan (no fat0 place tom ketchup or real tomatoes,chicken/ham/sausage/whatever plus veg if you fancy,cover in cheese and turn until cooked.Cut inot triangles and serve with cucumber/carrot sticks.

I hated chocolate pudding when little - the only thing I wouldn't eat..!

My DD is 12 - the children I mind are about 6m to about 12(ish);we generally have 9 children & 4 adults at lunchtime & 12 children & 2 adults at teatime

DH & I often eat the same (but not on Fridays as I won't cook tea on a Friday)

My choc pudding is a (sort of) steamed sponge pudding usually with custard or ice cream (yum, yum)

It looks good to me, the only suggestion I can make is maybe to switch the sausage & mash, and spaghetti bolognese meals. Pizza toast and spaghetti bolognese are both quite tomato-heavy and if you didn't like tomatoes (cooked or raw) as my DS doesn't, you'd probably not do too well that day.

Nigella Express has an eggless mousse recipe, it's a chocolate mousse though so if you went for that I'd probably just put in a fruit salad + yoghurt for the chocolate pud.

Where can I get the mousse recipe? I can replace the choc pudding with it & do an apple pie instead of blancmange

Here is the recipe - it's the same as in the Nigella Express book as far as I can see.
