Healthy meal ideas- need to lose weight but love cooking!

I desperately need to lose weight (at least a stone) which has crept on since we got married two years ago.I'm only 5ft 1 so it really shows.

Anyway, the last time I had to lose weight I was at university and so did the Weightwatchers Points system and basically lived on the WW ready meals which come already 'pointed'.

The difficulty is now that DH and I both love cooking so eating low-fat ready meals isn't an option this time. We need some ideas for low-fat, healthy meals that we can both cook and eat, although DHs portion will be much bigger than mine as he certainly doesnt need to lose weight!

To complicate matters further, largely for financial reasons we only eat meat once or twice a week.

The only low-fat meals I can think of are things like plain grilled/baked chicken with veg, or fish with new potatoes and veg (which we had last night).

Please can someone inspire me?
TIA

Hmm, maybe try the cook yourself slim recipe book? We've got it and DH loves cooking from it - takes abit of time to cook the stuff in general so probably a good one for foodies...

Hi, I'm in the same boat as my DS is nearly one now and I've still got the baby weight to go. I love to eat seasonally and naturally don't eat/use that much meat in my cooking. Do you have an organic box scheme near you? It forces you to eat lots of seasonal vegetables regularly, which fill you up and stop you from eating loads ready meals as there is no room in your fridge for anything else!

Thanks guys, Im bidding on the Cook yourself Slim book on ebay! Really good idea about the veg box scheme, I can see how that would force you to use things up- Im quite a control freak though and like to choose what veg I'll be eating, I like most veg but do have an aversion to kale and swede.

Does anyone else have any idea for healthy, non-boring low fat dinners?

Last night DH cooked smoked haddock risotto with loads of courgettes and tomatoes in.

The BBC Good Food site is brilliant, you can search for recipes within a calorie range eg less than 200, 200-400 and so on. I get lots of inspiration from there. The Sainbury's magazine is also good for recipes.

I did WW before our wedding last year and lost nearly 2 stone. I prefer to cook from scratch rather than eat ready meals so if I see a recipe I like that is high in calories/fat I amend it myself to make it more WW friendly.
