Slow cooking turkey on Christmas Eve - anyone?

Am thinking of doing this, slow cooking overnight, as in previous years our 15lb bird hasn't been ready till about 5pm, or later! Despite following Delia's instruction to the letter I never seem to get it done in time - I have an electric oven so not sure if this slows things down. So if anyone out there is a dab hand, who may like to share tips, I'm all ears

ahem of course the copious amounts of alcohol may have had something to do with the delay, but I always feel like I know what I'm doing

Sorry I have no suggestions about slow cooking but wondered if you have considered using Nigella's cooking times for turkey?

She suggests a 15lb bird takes 2 and 3/4 hours. Preheat oven to 200oC gas mark 6, paint the turkey with a preheated goose fat and maple syrup glaze and roast for the given time.

Test it to see the juice runs clear when piercing the part where the body meets the leg. Cover with foil and rest for 20-40 mins.

We used this method last year and it worked really well and meant our turkey was not overcooked as most of us tend to do.

There was some controversy in the press last year that this amount of cooking time was unsafe and could lead to food poisoning so you do need to test carefully. We lived to tell the tale and it was nice not having to get up at the crack of dawn to put the turkey in the oven!

one good tip if you are going to cook overnight is to cook the turkey upside down so all the fats run out.

Thanks - sounds good but don't like maple syrup taste

If anyone has the timings/temps for the overnight thing I would still welcome them, otherwise with trawl the web - the septics will no doubt have loads of good tips
