Does anyone have a recipe for parsnip soup please (Christmas Day starter). Have searched BBC food and not quite what I'm after!

What are you after? I've just made a parsnip soup this afternoon. Parsnips, carrots, some onions, stock, seasoning, bit of chili paste. It's a bit thick so will thin out with coconut cream/milk and whizz in a blender.

Both sound lovely. Was trying to find a recipe for something not too creamy, was thinking I could add creme fraiche rather than cream... ?

Parsnip and lemon soup is lovely I don't follow a recipe just bung it all in the pan. Think carrot and orange but parnsip and lemon instead.
Onions, parsnips, lemon zest and juice, vegetable stock, S&P. Simmer til parsnips are soft and blend.

I do a parsnip and carrot soup, with a bit of ginger/chilli thrown in. The ginger really lightens it up. I then do a garlic and thyme baguette to go with it. Thats what im doing for my starter this year i think.

If you dont want it too rich, how about just putting some fresh yogurt on it when its finished.

Inspired by this thread I've just made a big pot of parsnip and lemon soup and will now have to go out and buy more parsnips to roast on Christmas Day!

This is a great thread: I'm going to try both yours smac and mrswill's version. I love carrot and lemon soup too (have issues both with curried soups other than dahl, and have had enough of orange; they seem to put it in everything these days).

Brilliant! Thanks to you all! Loving all these recipes, the lemony one sounds gorgeous.

Before I checked this thread I emailed Barnsley House where I had the most amazing Christmassy parsnip soup ever, which was my Christmas Day soup inspiration, and asked them if they'd mind sharing the recipe. The got back to me tonight....

1 onion
2 cloves
4 parsnips
veg stock
cream
seasoning

sweat onion, cloves and parsnips, then add stock until parsnips soft. Push through sieve, add cream and seasoning and serve...

I can't wait to make it! The most festive thing I've ever tasted! Hope I can do it justice!

I think parsnips are the root of all evil, however my DH loves them. We get an avalanche of the horrible things in the veg box this time of year so I make parmesan and roast parsnip soup. It is apparently nice.

Parboil parsnips in boiling water for 5 minutes, drain and keep the water you boiled them in. Stick parsnips in a roasting tin with hot olive oil, dab a bit of butter and sprinkle over some parmesan. Roast for 40 minutes or so.

Drain the roasting oil into a big pan and fry an onion for 5 minutes. Then add the parsnip water with a veg stock cube. Chuck in the roasted parsnips. Boil for 20 minutes then blend (I have one of those whizzy hand blender things which is good as long as you remember to keep it submerged). If it is thick like glue it needs more water. You can put a bit more parmesan, some seasoning and even a bit of cream in at this stage if you like.

The Christmassy one with cloves sounds nice too. TBH the parmesan one sounds delicious but too much of a faff. For me soup is chop veg, put in pan, let it simmer, season, blend and serve.

Parsnip and Parmesan soup is lovely. I think from one of the Covent Garden cookbooks, but not sure.
