I wanted to know this the other night.

Water didn't work.

Double cream sort of did but tasted weird and didn't harden that well.

Was just about to post this very question...

Water and milk make it go hard in the pan...

CremeDeMenthe · 21/12/2009 21:26

butter?

DaisymooSteiner · 21/12/2009 21:27

Yes, butter should help.

Shitemum · 21/12/2009 21:29

will butter make it runnier but still set and not go sticky?

Make a cone shape out of greaseproof paper. Fill with choc and cut the tiniest hole at the end. I do this to drizzle chocolate on cakes and it works a dream

what blame said.
Never water or milk.
Butter and cream won't hurt but won't set as well.
If you drizzle off a spoon it will clump, you need something v small to drizzle it with.

On nigella tonight she made a lovely chocolatey topping for cookies with icing sugar, water and cocoa powder - just not sure of the quantities.

Maybe someone else will know

I make chocolate ganache with 225g butter to 250g dark chocolate. You just melt them together and stir until emulsified.
You can use cream too but it won't set as firm and it isn't as nice and shiny. Equal weights of cream & dark chocolate works fine- chop the choc into small pieces, place in a bowl then bring the cream to the boil and pour over the chocolate. Again, stir until smooth.

never add water to melting choc - it goes all weird and lumpy and doeasn't melt properly - also make sure the bowl / spoon is completely dry.
