When a recipe calls for wine.....

...I am a bit stumped. I never have 'leftover' wine - if a bottle is opened 'round here, it is finished! hiccup!

So, do you buy inexpensive wine just for cooking? If so, what kind and what sort of price?

And if you open some inexpensive wine to cook with, how long will it keep (generally) for cooking purposes before it has to be used/thrown away?

I use stock or water if no wine left over.

You could freeze wine in an ice cube tray and then you have some to hand. Buy a bottle specially for this.

We bought a 2litre box of cooking wine for making non alcholic mulled wine for a school event.

£3!!!

am waiting for it to be used when DH makes his delish Italian beef stew with polenta and gorgonzola.

ooh I found wine in tesco that was £7.98 or 3 for £10 so have currently used most of a bottle in lasagne and am drinking the rest

We buy the cheapest white/red wine we can in a screw top bottle. Keep it in the fridge for cooking.

I usually use the same stuff as I drink, cheap wine tastes bad!

Hadn't thought of box wine....that might be a solution.

fab - freezing could be good too. Presumably you'd have to melt cubes to measure whatever quantity the recipe calls for?

duckyfizz - Can you really taste the difference when you cook with good wine vs cheap wine?
