Looking for some tasty tofu recipes

Trying to be healthy and cut out the amount of meat & dairy protein we consume here. What can I make that is vegetarian but not heavy in cheese. I've never cooked with soya / tofu either so I really don't know where to start.

we have had a pasta bake with smoked tofu this week - fry the tofu with onions, garlic and chillies (add to cooked pasta and pour on some passata, sprinkle with cheese and bake)

we use the veggie sausages in casseroles, and with mash and gravy

you can make a nice bolognese with quorn mince, i shall be making one tomorrow for DB & SIL. sausages are also good. the tofu pieces are quite tasteless, so good in stir fries with a tasty sauce
that pasta bake sounds good

This is lovely as part of a Thai meal:

240g bean curd/tofu, squared

Oil for deep frying

2 tbsp oil

1 tbsp Thai red curry paste

2 tbsp light soy sauce

2tbsp sugar

4 tbsp veg stock

2 tbsp ground roast peanuts

2 red chillis chopped

2 kaffir lime leaves, rolled and slivered

  1. Deep fry squares until golden brown
  1. Drain, arrange on serving dish and set aside
  1. Heat 2 tbsp of oil and briefly fry curry paste
  1. Add soy sauce, sugar and veg stock, mix well
  1. Add ground peanuts, chillis and lime leaves
  1. Reduce heat and simmer until the sugar thickens the sauce
  1. Pour over curd and serve

Query, all you tofu gurus: do you squeeze your tofu? Mine always comes out rather liquidish.

Also, Ruby, is it kosher? (for a guest)

I do. I get the fresh stuff from the Chinese supermarket then wrap it in a clean tea towel, stand it on a plate and weight it down to squeeze the liquid out. I usually have to squeeze the tea towel out a couple of times as it's amazing how much liquid comes out. It's worth doing though as it holds it's shape really well.

Also, "silken" tofu is much more liquidy than the firm stuff. It's good for desserts and stuff but no good for frying.
