Nice sauce for Roast Beef

Having Roast Beef for Christmas dinner. One guest can't have gravy (migraines).

Any suggestions for a nice sauce? There will be horseradish, but something a bit more "saucy" .

what about bread sauce?

SantaClausImWorthIt · 15/12/2009 19:44

Why on earth would they get a migraine from gravy? It's just the juices from the meat!

Unless you're using something horrible like Bisto Gravy Granules of course ....!

my dh is a chef and always finds that best thing to do when cooking for someone with an allergy etc. is to ask them what they would like instead.

GrimmaTheNome · 15/12/2009 19:53

You'd better ask this guest what component of gravy causes the problem. If its cornflour, then would wheat flour be OK, or the other way round.

Thanks for the replies.

Lol, I never thought of making real gravy! It has been Bisto for generations here

All right, I'll skulk off and make myself a pot noodle.

Sorry - that was probably a bit of a harsh reply!

Just serve meat juices, to which you have added some red wine (alcohol will be cooked off if you bring it to the boil and reduce it) and that should make lovely gravy.

simmer half a bottle od red wine and half a pint of balsamic vinegar and reduce to half. Either add marjoram or red currant jelly or both...really yummy.

Red wine often triggers migraine.
Roast some onions in with the beef and that will also help to make an excellent gravy if you then add beef stock (the gravy can be thickened with flour or cornflour).

ItsAllaBitNoisy · 15/12/2009 20:46

Yes, will need to avoid the wine as well.

And chocolate. And cheese.

My poor Mum.

Lilymaid, thank you, I will do that.

also add madeira wine to beef juices, some beef stock and simmer tl reduced. If not thick enough add a small amount of arrowroot to thicken as this keeps the sauce clear. if too thick add more stock or madeira

alypaly · 15/12/2009 22:28

bearnaise, hollandaise or horseradish cream sause. OR a coarse grained mustard sauce

alypaly · 15/12/2009 22:33

tarragon wine sauce is beautiful with beef and so is green or pink peppercorn sauce...oooh im in the mood for cookin...or even a diane sauce
