I want to try my hand at making some chocolates and fudge for homemade pressies this christmas. Anyone have any good recipes?

Really simple truffle recipe. Melt 200g dark chocolate in a bowl over a pan of water (or in the microwave) Add two tablespoons of either something alcoholic (have tried champange, Bailey's and rum. All work well) or fruit juice (orange (ie from an orange, not from a carton) is nice). Mix it into the chocolate. It will look like it's gone horribly wrong, but don't panic. Slowly add a tablespoon or two of runny honey (sounds weird, but you can't taste it) mixing all the time, until the consistency is lovely and glossy (doesn't take much - best thing to use if you have it is the squeezy bottled stuff, as you can add it really slowly and it doesn't get wasted) Then put it in the fridge until it cools and sets slightly. Using a teaspoon or your hands, roll it into balls, then roll the balls in cocoa powder, icing sugar, coconut, chocolate sprinkles, hundreds and thousands (you get the idea). Really yummy. Need to be kept in the fridge.

A good couple of weeks. Though in my house it was more like a couple of hours...

Fudge - 1lb sugar, 2oz butter, 1 can Carnation milk, 2 tblsp milk.
Put it all in a pan and cook over medium heat until the sugar is dissolved. Boil fast until the soft ball stage is reached (scoop out a tiny bit of mixture and drop it into a cup of cold water - if it forms a ball, it is ready. if it goes stringy, boil it for a bit longer).
Take the pan off the heat and whisk/beat it until it is thick and almost setting. Generally, this is when your arm feels like it is going to fall off .
Scrape the mix into an oiled/greased dish and leave to set. Cut into squares and eat pack into tasteful boxes as presents.

I can see I am going to have to make double batches of these recipes so that I have some chance of having any left to give away!
