Rib of beef for tmrw - help please

I am cooking a medium rib of beef (Aberdeen Angus Bone-in rib joint) for a family meal tomorrow. I enjoy cooking but hardly ever cook joints of meat so could do with some quick advice on how to cook it.

I don't want to have to buy lots of new ingredients but have a well stocked kitchen.

Am also making NIgella's gammon in coke.

i smother mine in french mustard, rock salt and black pepper

i put it on a bed of whole garlic heads, onions or shallots and plenty of red wine or port to make a gravy (splash of olive oil)

Thanks Ruby - do you cook it in foil? How long should I cook it for? I like my meat quite rare but dp's family are very English in their tastes and the meat needs to be burnt.

i cook it at 20 minutes per lb and let it rest for at least 20 mins before serving

this makes it fairly rare

if they want theirs cremated, then slice it after cooking and whack it in the microwave - i won't cook meat well done as i can't stand it (like mine mooing )

i only cover in foil if it is getting quite well done

Nigella's Christmas book has a recipe for rib of beef.
She lies it on a bed of onions, slathers with oil, salt, thyme and cayenne pepperand serves it with a port and stilton gravy which sounds rather nom-nom.

You also need to seal it first as will keep in all the juices and make the meat tender. Agree with cooking it how you like it and then microwaving to taste.

put oil in pan and heat on stove then put the rib in and just brown it on all sides before putting it in the oven.

Silly perhaps but um, what temp to I cook it at? Hope someone can help, it's waiting to go in the oven!

Personally, I'd cook it on about gas 5 for about an hour and half. That'll come out quite rare. Enjoy!

I do mine at 210 for 15 minutes per pound then 15 mins extra, that is NIgellas timings and have always worked for me.
