WTF is osso bucco?

GOODASGOLD · 11/12/2009 22:57

Sponkle, second a request for the recipe for cheesy leek and bacon, sounds yum-my.

Ours are depressingly few:

Shepherds pie

Gammon cooked in the slow cooker

Ouch M&S Ready meals

Fish and Chips

Beans on toast

How rubbish is that? Pants.

SomeGuy · 12/12/2009 03:50

osso bucco is braised veal shanks.

god knows where you get veal shanks from....

stressedHEmum · 12/12/2009 09:58

Osso Bucco: you can buy veal shanks for this from www.blackface.co.uk and other such places, (rose veal only, thankfully), have never seen them in the shops, though, but that might just be where we live. To be honest, I didn't realise it was a staple food to anybody, I always thought of it more as a luxury item.

Staple meals in here depend on the season because I have to cook what's in the box. At this time of year we eat things like:

easy cabbage rolls
squash and leek rissotto
baked potatoes with braised leeks and smoked mackerel
beetroot and carrot soup
lentil and kale soup
kale, chorizo and chick pea soup
chick pea curry with seasonal greens
potato curry with seasonal greens
lentil and root veg casserole
mushroom curry
mushroom stroganoff
potato, cheese and leek pie
shepherdess pie
cheesy mixed root mash
porridge steaks with mushroom sauce and bubble and squeak
venison casserole
cumin scented beef with red peppers and canellini beans
white fish chowder
pumpkin, apple and lentil curry
hare casserole (when I can get hare, expensive but one hare can feed about 12-15 people once you add veg and things to the casserole.)

All year round meals include things like:

tomato and cheese rice
pasta bake of one kind or another
garden veg rice
rice and beans with soy mince
spicy lentils and rice
tomato mince
curried split pea soup
pinto beans with either rice or corn bread
bean chilli
eggy rice
kedgeree
easy malaysian noodles
satay stir fry
hicken soup
chicken curry
chicken pie
creamy chicken with baked potatoes
meatloaf
meatball subs
chilli
chilli dog bake
lentil loaf
lentil burgers
lentil sloppy joes
lentil stew
mediterranean beans with rice
quinoa casserole.

Every week, I pick meals to use the veg box up and and things from my whatever meat box I have bought that month. Then I pad the meal plan out with generic things that I can cook any time of the year.

Osso bucco recipe www.bbc.co.uk/food/recipes/database/ossobucomilanesestyl_65553.shtml

you can get veal shanks from your local butcher. it is very good and i always add an extra can of chopped tomato and have very nice tomato sauce ready for pasta the next day.

doesnt shepherds pie take a long time to do?
do you do your own mash?

thanks for all the ideas!!

OP posts:
SomeGuy · 12/12/2009 16:04

how much do you pay for veal shanks? lamb shanks and oxtail are both cheap, no idea about veal.

shepherds pie (or probably cottage pie in most homes) takes about 35-40 minutes, 20 minutes to fry mince and chopped onion, add herbs, bovril/beef stock, while boiling potatoes, then mash potatoes, put mince in a fairly flat flat dish, cover with the mashed potato, and grill for about 15 minutes until the top is crispy.

V.interested in the leek pies - recipes?

stressedHEmum · 12/12/2009 17:43

Anytime that I have seen osso bucco, it tends to be between £25 and £30 per kg. I think that blackface do a 2 pack for about £12, when they have it, but as you need one shank per person, it's way too expensive for us. It's not common in ordinary butcher's shops, in fact you cant get veal in any butcher round about here at all, although as there are only about 3 butchers within a ten mile radius, that's not saying much.

If it's my leek pie, I don't really hvae a recipe. I line a pie plate with puff pastry, then boil a couple of decent sized potatoes and cut them into little chunks. Then I fry a couple of chopped leeks and an onion until soft, mix with the potatoes and a good bit of grated cheese. Season well and let coo a bit. Then I sort of pile it into the middle of the pastry, top with another round of puff pastry, cut a steam vent, g;aze with milk or egg and bake at around 190 until the pastry is risen and golden. It's a bit like a huge cheese and onion pasty.

tostaky · 13/12/2009 10:19

I think I pay around £7-8 for two shanks (one each) and I go to a nice free-range butcher in west london.
A bit luxurious but once a week it is worthy!
