Chickpeas - inspire me

I have a big bowl of chickpeas ready to be used and no idea what to do with them. All I can think of is chickpea curry but can't really be arsed with a lot of faffing about.

Add a tin of tuna, one chopped boiled egg and chopped parsley an onion (this is optional). Season with olive oil and a bit of vinegar.

cook diced onion and carrots in oil, add some diced potatoes, tin toms, basil and pepper, and cook till pots soft, about 30 mins. add chiokpeas and warm through.

Fry some onion with some spices (cumin, coriander, tumeric and chili from memory, can't remember quantities though!), add chickpeas and one tin of tomatoes. Cook for a bit. Add some spinach and cook until wilted.

I do a variant of BorntoFolk's recipe every week. I put in chopped courgette and pepper with the onion, and don't use spinach (or it would be just me eating it). My new discovery is rose harissa paste and I put a spoonful of that in at the end. Serve with quinoa/bulgar wheat/rice and a dollop of yoghurt.

I have no idea how to share the link but I just typed in houmous recipes and found it easily!

I was amazed how easy it was to make and it tasted so good!

chick pea and apricot dip

1 tin chick peas (or equivalent)
8 dried apricots
2 cloves garlic
1 tsp ground cumin
0.5 tsp ground cinamon
little bit chili powder to taste
little bit of salt to taste
1 tsb (ish) olive oil

whizz in food processor into smooth paste. Spread on bread/toast or use as a dip.

hummus?, roast onion hummus is lovely, 2 onions (red ones are nice) softened in a frying pan with a little butter till slightly golden, then stir in to the hummus when it's made (don't have a recipe, but if you google, there are loads)

where you get your harissa paste faintly macabre, been looking everywhere and just settled for a extra special moroccan rub from Asda with rose petals in it but would love the real thing

Chickpea salad:

Chopped spring onion or shallot
Chopped parsley
1 chopped tomato
Oil, vinegar, salt, pepper.
Cooked chickpeas.

Mix all ingredients together - the oil and vinegar as a dressing.

Works well with cooked whole lentils too.

Popular here with me and dh, not with dc's though!

Sexbombbikerchick, not sure if it's the 'real thing' or not, but it is extremely delicious. It's made by Belazu and comes in (much too) small jars. Sainsburys and Waitrose both stock it, Sainsburys in the 'exotic' section.

Sorry didn't get back earlier, flippin' PC crashed! Wow, some lovely ideas there - tanks so much! We had a pizza in the end but the chickpeas are waiting there for tomorrow so I will try out one of those ideas. The chorizo one is sounding delish - love chorizo! The tuna one also nice and quick... and had never even thought of falafel! Cheers, everybody

Falafels - grind in a food processor with garlic, cumin, lemon parsley, bit of olive oil, shape into patties and shallow fry. Can add tahini if you like it or make a tahini sauce
