sugar-free jelly recipes please!

I want to make some jellies for a Christmas tea, and I'd like to make something that isn't sickly sweet.
Is sugar necessary when you're making jelly? Ie is it possible to gelatinise water? (ok, I won't do it, it sounds disgusting) I guess I was wondering if I could dilute juice and use that as the liquid - anyone done this?

you can set any liquid using gelatine, except for (um) fresh pineapple juice or neat spirits.

lots of recipes about if you google - I did a fab one last Christmas with orange juice and bitter lemon. No need to dilute juice though, else it won;t taste of anything.

aha, it was Jamie who inspired mine - I wanted a booze-free version hat was still fizzy.
IIRC Nigella does a gin-and-tonic jelly, which would def not be too sweet

Oh, I didn't make it clear that it IS for children - so whilst gin and tonic and prosecco etc. sound delicious, I don't think I can really feed them to a gang of 2 year olds!
Does spiced apple jelly sound disgusting? I can't decide if it sounds utterly foul, or actually rather nice!

I used an Annabel Karmel jelly recipe for DS's first birthday party which was just fresh Orange juice with a tablespoon of sugar and gelatine sheets. It wasn't sickly sweet and you could leave the sugar out too if you wanted.

I think, as others have said, as long as you avoid Pineapple and Kiwi, all other juice will setwith gelatine.

goldensnitch, could you? Would be very kind! I've done elderflower ones in the past, but I'd rather do something a bit 'healthier' for a tea that will be rather too full of all sorts of sweet treats!

Sorry - just seen this.

Orange Jelly

4 leaves gelatine
600ml/1 pint Fresh Orange Juice
3 Tablespoons Caster Sugar

Break the gelatine leaves into a shallow dish (use 6 leaves to make a firmer jelly if using a mould).
Pour over 6 tablespoons of the Orange Juice and leave to soak.
Heat the rest of the juice until very hot but not boiling and stir in the sugar (if using) until dissolved then remove from the heat.
Add the softened gelatine a bit at a time, stirring into the hot juice. Stir in any juice left in the dish also.
Leave to cool.
Pour into bowls or moulds and chill until set.

You can use any juice you fancy. I found that the Orange juice did need the sugar but slightly sweeter or less tart juices didn't.

Unless you buy Vegetarian gelatine.....

Supercook does one called "Vegegel". You can get it in most supermarkets.

1 sachet is usually about the same as 4 sheets.

Ah, thank you v much and no, not too late! Sounds perfect, I will make it at the weekend. Just one other question for the jelly making queens of mumsnet - would it be ok to put frozen raspberries in this? Can I just drop a few straight into the moulds at the end? Or will they mess things up as they defrost, do you think?

I should think they would work fine. Might even make the jelly set a bit faster

You can buy an Organic Apple and Raspberry juice that would probably be delicious with raspberries in too!

Just remember to avoid pineapple, kiwi and papaya as the jelly won't set with those in.
