It's a ham in its uncooked state, gammon when it's cooked....I think.

I've not cooked one with the bone in, always boned. I simmer it in water with an onion, peppercorns and bay leaves for a few hours and then you can make a glaze, baste it and stick it in the oven for 20 mins or so.

Nigella does some nice recipes, ham in coke is nicer than it sounds. Delia probably does a few recipes for glazes aswell.

You have to do ham in coke it is so lovely and gets devoured here. Although it does sound horrid it is really good.

I was always told that the gammon was uncooked and the ham was the gammon once it had been cooked. Clearly reading the article, it's more complicated than that!

You will want to order a gammon. I get it unsmoked (green) but that's just personal preference.

And do try Nigella's ham in coke. It's fantastic. You boil the ham in coke and then cover with a coca cola glaze and roast in the oven. She does variations on the recipe in nearly ever book but my favourite is the one in How to Eat.

I did the Ham in Coke and thought it was truly vile. So much so that I'm not even going to give it another try.

My mum always used to do a lovely ham but, like you, I never got the recipe before she died.

I know that the ham first has to be put in a pot of water (so it covers the ham) first. You bring it to the boil and then discard the water before you cook it again. I assume this is to make sure it's not too salty.

When it's cooked, my mum used to cover it in a mixture of mustard (English mustard powder) and demerara sugar, and then roast it slowly.

salt beef is a nice alternative, and very similar really.

I boil it with an onion, carrots, several spoons of Colmans mustard powder, allspice, juniper berries, cloves, cinnamon stick and bay leaves. Boiling keeps it moist. Takes about 90 minutes.

You could do the same with ham, I think it's a good idea to soak it over night first to reduce the salt. Maybe add a few spoons of honey.

I wouldn't do coke personally.

And make sure it's ham on the bone. A home cooked ham on the bone with plenty of flavourings will always be delicious.
