anyone know anything about freezing yogurt?

making frozen yogurt is it as simple as just bunging a tub in the freezer?

I have a recipe for lemon yoghurt icecream which is basically just lemon juice, sugar, greek yoghurt and a little bit of cream.

But it does come out very hard and you need to stir it frequently during the freezing process to break up the ice crystals, as yoghurt is obviously more watery than cream.

Basically though, in answer to your q - yes. I suspect commercial frozen yoghurt has air whipped in to keep it soft. And you probably couldn't freeze low fat yoghurt at home as I imagine it would separate. Might be wrong though - I've never tried.

Jamie Oliver has a recipe that's frozen fruit whizzed into yoghurt...very nice but he fails to tell you that you need to take it out of the freezer at least 15 minutes before you want to eat it. probably ideally 30. however you learn this when you sit round a table with a bunch of guests hammering aweay ot their desert - and nearly breaking your glass bowls - whilst politely trying to smile and say how nice it is...
