Hmm, they aren't really desserts but me and DS1 just made rice krispie cakes in about 5 mins flat!

Bobbybee · 04/12/2009 14:50

Thanks. They're brilliant for snacks but I'm thinking of something a bit more filling. I'm doing banana custard today but would appreciate more ideas.

Sadly my only other idea was fruit and custard (my lot love it). I don't really bother doing proper puddings here as none of them like them!

In summer we have plenty of ice cream in the freezer and a stock of meringues to make mini pavlovas or eton mess.

Have to say winter is a bit more difficult so it's mostly crumbles or stewed fruit with cream or custard. Sorry, not very helpful.

Nigel Slater has a book of quick desserts, which may give you a little inspiration.

real fast puddings

Core and slice some apples. Saute in some butter and squeeze an orange over. Turn heat up high to reduce to a syrup.

Serve with custard or ice-cream

Peel, core and halve pears stick in a dish. Squeeze an orange over and add a cinammon stick . Shove in a medium oven for an hour. Serve with custard, cream or ice-cream

Put butter in the bowl and chuck into microwave to melt then add sugar flour and eggs and milk.

You can add fruit or cocoa if you want to make a chocolate one

Do you have a slow cooker? rice pudding in that is fab and really easy.

Cottage cheese with pineapple and banana. Babies love it. For older kids, try custard pots and fruit compote mixed up. Muller Rice? Yoghurt sticks in freezer. Smoothie sticks in freezer. Rice cakes covered in yoghurt coating (morrisons do them in organic range)
Fairy cakes covered with custard?

Black cherry yogurt with a chocolate digestive crumbled up in was my favourite dessert as a child.

I actually came on this thread having seen the title, thinking I would give you my tequila ice cream recipe as it is the easiest pudding in the world. And then read the full thread and realised that might not be quite what you were looking for.

Crumble - You can freeze batches of crumble topping and through over tinned/frozen fruit if you need speed.

Bread and butter pudding - Butter 2 slices of bread, put in greased tin. Pop in maybe some fruit, banana, raisns, apple etc. Then out more bread and butter over the top. Whisk egg, milk, bit of sugar and spices then pour over. Cook in oven till crunchy on the top and squidgy in the middle.

Rice pudding - again can be frozen in batches, cooked in sloq cooker or microwave. When defrosting you can add jam, chocolate, fruit, nuts, museli, yogurt....

Pancakes

Scones - flour, dollop of marg, rub in. This can be frozen. Add milk/water then what ever you fancy: raisons, nuts, coconut, chocolate bits, apple etc and shove dollops (don;t bother with cuttes!) in the oven... Thy freeze really well too.

Spongy pud - 1 oz fat, 3 oz sugar, 4 oz flour, 4 eggs and what ever else you want: fruit, raisons, chocolate, ginger, spice, prunes are nice. Pop in loaf tin and bake.
