Please inspire me I have gestational diabetes and bread is sending my blood sugars sky high. I usually have a sandwich for lunch but unfortunatly this is no longer qn option. I am getting sick of jacket potatoes now and so am looking for some other suggestions.

duckyfuzz · 02/12/2009 19:52

nice big salad, couscous/rice to bulk it out
soup
omelette
wraps?

mummytopebs · 03/12/2009 10:15

Thanks i will definitly try the ryvita and see how that effects sugar level.

Unfortunatly soup, wraps and even eggs (have no clue why) send my blood sugars to high so they are out of the question.

Soup.

Salad with lots of feta cheese and meat.

Those were my staples when I was on low-carb a few years ago.

BonjourIvressedeNoel · 03/12/2009 10:22

how about a chicken broth type soup rather than a carby veg type soup?

IMoveTheStarsForNoOne · 03/12/2009 10:26

macaroni cheese

OrmIrian · 03/12/2009 10:26

Lentils are a good source of protein and lowish in carbs (low GI carbs anyway). I always put a few lentils in any soup to thicken it.

ShinyAndNew · 03/12/2009 10:28

I love Salads. HUGE salads, with tuna, parmesan cheese, beetroot, lettuce, cucumber .... mmmmm.

I know what I am having for lunch now

Grilled chicken, with baked sweet potato is noce too.

slimyak · 03/12/2009 10:56

Boo, salad in December, it just not right IMO. Although I am a huge salad fan, just feeling the cold.

Is it all bread that sends you rocketing? Have you tried wheaten or black bread? Both best toasted IMO. Of you can get north Stafforshire oat cakes they're pretty good too, Tesco used to sell them.

Otherwise I'd go with soup but avoid carrot, red pepper, tomato etc as they are good for sugar hikes.

OK I back track on the salads, warm lentil salads are good in winter.

If things like eggs are sending your sugars high I'd go back to your Midwife and get a dieticion referal.

Hope you don't have long to go. I did the last 4 months of Preg with GD, which was over summer months and I lived on salad, oat based stuff and celery, or that's what it felt like. Remember, it won't last and one day soon you'll get a lovely little cutey and a large box of Thorntons Continentals to celebrate ( you could put them in a sandwich if it adds to the pleasure) - put the order it now!

BlueKangerooWonders · 03/12/2009 10:59

are you at home? What about breakfast for lunch - bacon and eggs would be good!

chelseamorning · 04/12/2009 13:04

Potato cakes! (We have them as an alternative to bread as the latter can really bloat me.) They're very versatile and you can add lots of toppings to ring the changes:

Baked beans and/or cheese
Eggs (fried or poached)
Salmon and cream cheese
...

Treat them as an open 'sandwhich' perhaps.

chelseamorning · 04/12/2009 13:05

p.s. Forgot to say, you can just pop them in the toaster to warm up first before topping them.

IMoveTheStarsForNoOne · 04/12/2009 13:08

Ploghmans without the bread? Pickle, cheese, cucumber, apple etc?

What about pasties or things in pastry? Go to Greggs

mummytopebs · 05/12/2009 17:21

CHELSEAMORNING what are potatoe cakes? These would prob be ok as i usually fine with potato x

And yes pasties seem ok but would feel a tad guilty hsving them every day x

if you take a look at lowcarbmegastore.com they do bread for low carbers ( obviously) thing about low carbing is that it's low in sugar.

it's quite expensive - but when you long for a piece of toast or a butty - its well worth the 2.99 for a little loaf.

worth a look - there are lots of other things too - like sugar free sweets and sugar free syrups for coffee

Tortington · 05/12/2009 17:30

here

Hel79 · 06/12/2009 18:51

Oatcakes with cheese are lovley and really filling

Reesie · 09/12/2009 22:20

Can you just make an extra portion of dinner in the evening and pop in the fridge to reheat in work the next day?

nappyaddict · 10/12/2009 11:35

Rice cakes
Oat cakes
Ryvita
Crackers
Salad
Pasta
Rice

MrsMattie · 10/12/2009 11:36

I make really filling soups.

Carrot & lentil or spicy red lentil are my current faves.
So quick and easy, and fill you up (although not saying a nice, heavily buttered roll wouldnt go down a treat with them )'

upahill · 10/12/2009 11:41

I have cous cous for lunch a lot.

Once the cous cous is made I usually chop shop red and yellow pepper, slice raw mushrooms abit of ollive oil, maybe some avocado or sometimes chick peas or canelllini(sp) beans tomato, maybe apple if there's some in. I just use what ever is in the fridge.
Sometimes use Bulghar wheat if no cous cous.
Takes seconds to make.
