spiral pasta in a sauce, you could add ham and cheese to it
sometimes if i am short of time i make ds mashed potato mixed with corned beef or cheese with baked bean on top - he loves it,

i would speak to the childminder and make sure she only feeds him at meal times, he is probably eating so much during the day he is not hungry at teatime, maybe it would be an idea to make sure he is hungry by teatime so he will eat his tea (obviously not starve him lol)

Make sure he is just getting meals rather than filling up on snacks (and remember juice fills him up too).

What about pasta and pesto? or with tomato and veg sauce? cheese sauce with bacon bits?

pizza? can be healthy?

sausage casserole? (slow cookers are meant to be great for stuff like this)

soup and crusty bread

eggs and soldiers

baked potato with various fillings

If he is eating fine during the day it doesnt sound as if he IS very fussy?
