roast potatoes - anyone parboil the night before?

Am thinking about how much cooking there is to do on Xmas Day and wondered about peeling and parboiling the potatoes the night before. I've heard people say that it's fine and makes no difference to the potato at all, but other people say they would never do it. Is there an MN consensus?

i havnt done it but i certainly would i know people have made there own frozen ones on here befor by par boiling then rolling in whatever fat is your preference alowing to cool then bag up and freeze

Nothing wrong with parboiling them the night before ime. One less thing to do on the day itself!

I normally coat mine in a little polenta before roasting them in the oven and I wouldn't do this in advance however as it will go soggy

I would try the parboil and freeze option which is recommended by many - otherwise I'd suspect that the potatoes might either go a little grey in colour overnight or have that reheated potato taste.

If you freeze the potatoes do you have to defrost them b4 roasting?

I don't parboil them at all. Just chop them fairly small, straight into very hot oil and stir frequently.

Thanks everyone. I will try the parboiling and freezing thing next week and have a dry run to see what I think.

cook them strait from frozen like aunt bessies Hmmm think i will do a few batches this week and stock pile my freshly empty freezer

I always do parboil them the night before.
Works perfectly. They're never grey.
Throw them in hot goose fat and plenty of seasalt and half an hour later theyre done.

Do you put them in the fridge overnight?
