Something that does not need 'fancy' ingredients as i only have small basic supermarkets nearby and for a weekday.

Carnivore was a joke by the way but i just realised i have NEVER had a meal without meat!

Spicy bean burgers

1 finely chopped onion
1 finely chopped garlic clove
1 carrot finely grated
225g kidney beans
1 teaspoon mild curry powder/paste
2 tablespoons olive oil
2 tablespoons plain flour

Mash kidney beans. Fry Onions and garlic in olive oil until soft. Add grated carrot mashed beans and curry powder. Add flour and mix well. Leave to cool.

When cooled mould into burgers, this makes 4 large burgers.

Put in oven at 200 for about 10 mins. Put mozzarella or cheddar cheese on top and return to the oven for 5-6 mins until cheese melts.

My whole family love pasta with tomato sauce. Sounds so boring but if you can afford a small piece of good parmesan, it's delicious.
Finely chop an onion, fry very gently until translucent. Add a chopped clove of garlic for a few mins.
Add a tin of tomatoes or passatta (it's worth paying a little more, even a really good tin of Italian tomatoes will only cost £1)
Add a knob of butter, a tsp of sugar, salt and pepper then simmer for about 20 mins.

I blend mine at the end but only because the children prefer it. This can be served as it is with parmesan or;
Add some capers, olives and anchovies
Add a little squeezy chilli
Add some fried pancetta/bacon (I know you asked for meat-free)
Add to meatballs/sausages.

I often make a batch using 4 tins of tomatoes then freeze it - dinner can be on the table in 4 mins if you use fresh pasta!

Keep posting, I love to have lots of recipes to chose from (or i am trying to build a good veriety of things i can cook anyway )

I think i will start with the burgers tommorow, Thanks you chuckeyegg, and then i found a recipe on the link that i have copied and will try that next week.

Egg, potato wedges and baked beans. Quick, cheap, tasty, and does not have to be loaded with fat.

i make "paella" for the kids once a week - i've put it in inverted commas cause i think a spaniard would shoot me for calling this dinner paella!

1 onion chopped
1 clove of garlic chopped
200g rice
900mls chicken stock (i just use stock cubes)
1 pepper
(Chopped ham or salami optional)
1 tsp turmeric
1 tsp paprika
few spoonfuls of frozen peas or sweetcorn or both

Fry the onions and garlic until the onions are soft

Add rice and mix together.

Add the stock then the rest of the ingredients apart from the peas. It will be cooked in about 15 mins (when all the stock is absorbed)

put the peas in the last 5 mins.

easy peasy dinner!

turmeric is a yellow spice - just makes the rice yellow! it last for ages in the jar!

How about tortilla? It works really well with pretty much whatever is left in your fridge (admittedly you do need eggs ), its lovely cold the next day for packed lunches and everyone eats it.

You need a large frying pan.

Depending on size:

4-6 large eggs
Splash of milk
Potatoes: sliced and pre-boiled
Onion: chopped fine
Green veg: any combination of courgettes (sliced in half moons), green beans, peas, beans.
Leftover red/green/yellow peppers, chopped fine can be nice but not essential
Cheese: grated parmesan/cheddar/anything else. Some goats cheese is always nice chucked in as well if you have any.
Salt, pepper, herbs (oregano, mint, chives, whatever you have)

Chop and gently fry off onion on a low heat so it is cooked and just a little bit brown. Chuck in sliced boiled potatoes to brown a bit, then add the green veg. Cook for about 2 mins. Beat eggs with milk, season and add herbs and approx half the grated cheese. Pour egg mix over veg in pan and leave on heat to set on the bottom for about 4-5 mins. Once the bottom is properly set and the top is still runny, add the rest of the grated cheese (and any goats cheese if you have it) to the top, and put under a hot grill for a few more minutes until the cheese is melted and the omelette is set through.

Slice into wedges and serve hot or cold with nice bread or toast, and salad.

Cheesy Gnocchi
cook gnocchi as per instructions. Drain and stir in 2 big tbsp's philadelphia/soft cheese and a big handful of grated chedder. Stir briskly til incorparated.

Empty a tin of toms into casserole dish and stir in crushed garlic clove and tsp pesto. Plonk gnocchi mixture in and bake for 30 mins.

Serve with salad and garlic bread.

This is so easy and is deeelicious.

we have meat/chicken twice a week. Other meals include quiche and salad, soup and garlic bread, jaket potatoes with tuna/cheese, pasta with homemade sauce, veggies and chickpeas cooked in slow cooker, served with couscous.

To pad out the protein, remember that you can add red lentils to pretty much anything! Just wash them in lots of cold water, add them to whatever you're cooking (or simmer separately), and they're done in about 15-20 mins.

Don't forget hearty soups! They're perfect on a cold winters' evening and perfect with crusty bread and cheese (and red wine!)

Curries made with lentils or chickpeas are yummy and piss-easy to make.

Dice an onion and a couple of cloves of garlic and soften in oil in a big pan. When softened, add a tablespoon of garam masala curry powder and a tablespoon of cumin powder. Mix around for 20-30 secs so onions are coated, but don't let the spices burn.

Now either:

  1. Add a tin of drained chickpeas and a tin of chopped tomatoes, top up with a little bit of water or veg stock, cover and simmer for about 20 mins

  2. Add a cup of dried red or yellow lentils, a tin of chopped tomatoes and add a bit of water or veg stock, cover and simmer for about 30 mins.

You can also make with black-eyed beans, actually.

Serve with rice and or naan, mango chutney and a quick cucumber raita - just thinly sliced cucumber (and if you've got it a diced sprig of mint, but no worries if not) mixed into plain yoghurt and sprinkled with a bit of paprika)

I tend to make batches of three types of vegetable 'mixes' from scratch:

Root veg - combination of carrots, parsnips, swede, turnip, leeks, onions, garlic, etc
Mediterranean veg - combination of courgettes, peppers, aubergines, fennel, onions, garlic, etc
Green veg - broccoli, spinach and peas (not as awful as it sounds!)

I make in huge quantities and then freeze them in portions. I only add the basic seasoning. This gives me the option to add the 'mixes' to various dishes and then to flavour/adapt them accordingly:

Shepherd's pie - add kidney/adzuki beans and a little Marmite, or Quorn and veg gravy etc (top with sweet potato and goat's cheese - yum!)

Chilli with rice or burritos - add beans and some chilli sauce etc

Pasta sauce - add fresh basil or pesto etc

Soups, pies, stuffed pancakes - the list is endless!

This saves me loads of time and ensures we all eat plenty of veggies!
