I need a delicious egg-free recipe that I can bake in mini muffin tins that will double as birthday cake!

I am going to bake mini muffins/cakes instead of one big birthday cake basically to make it easier for them to eat. We're going to be having a picnic on the floor and I thought it might help the mess factor as they all go in at once . Anyway - one of the guests is allergic to egg and is very good about only eating what she's specifically shown she can eat, so i thought that I would either do all egg-free or some distinct ones egg free. BUT I need a recipe! please help.

This recipe is for eggless chocolate cake that is usually made in a 20cm round cake tin but you could make individual muffin type cakes instead.

85g butter, melted
2 tbsp syrup
1 tbsp vanilla extract
300g s/r flour
100g caster sugar
25g cocoa powder
1 tsp bicarb of soda

Tip the butter, syrup and vanilla into a heatproof jug, add 300 ml boiling water and briefly whisk with a fork to combine

Sift the flour, sugar, cocoa and bicarbonate of soda into a large bowl, then in tip in the butter mixture. Stir until you have a smooth batter, then scrape into prepared tin or muffin cases. Bake at 160/140 fan/gas 3 for 50 - 55 mins (20-25 mins for small cakes - but test first) until the cake is well risen and springy to touch. Cool in tin for around 15 mins before turning out to cool on a wire rack.

To make a chocolate glaze, put 100g chocolate and 3 tbsp syrup into a small glass bowl with 3 tbsp of water, and microwave for 30secs on high until melted and smooth. leave to cool, then pour over the cake(s) before serving.

Cakes are never as good without egg but this is passable.

My youngest dd is allergic to egg and dairy so I have a few recipes for cakes that she can have.

Chocolate Canadian Cake

Sift together:
3 cups self-raising flour
2 teaspoons salt
2 cups caster sugar
2 teaspoons bicarb
6 tablespoons cocoa

In a jug, combine:
2 tablespoons vinegar
3/4 cup of vegetable
2 teaspoons vanilla essence
2 cups warm water

Add liquid to dry ingredients and whisk.
Bake at gas mark 5 for 35 mins, or until cooked through.

Chocolate Fudge Icing:
Melt 3oz butter in a pan, stir in 2 oz of cocoa and cook for 1 minute.
Remove from heat and stir in 8oz of sieved icing sugar and two take spoons of milk.

My aunt doesn't eat eggs and what she does is take any standard cake recipe and subsitutes a large tablespoon of yoghurt for each egg. Her cakes are generally quite decent, but I agree, cakes are never as good without the egg.
