'weightwatchers' meal for 4

Wondered if any of you could help me out please? We have my parents coming for the weekend. Often mealtimes are a little fraught as my stepfather has 'ishoos' with food (could be a whole other thread!). Anyway, he has started doing weightwatchers and I want to be supportive of this. Any ideas of easy, but tasty, meals I could do. I just need two suppers really, as we'll just be doing sandwichy lunches. 14 week old baby too, so as simple as possible would be great.

Another forum I use won't let you use the word 'weightwatchers' because of the oh-so-rude word in the middle!

My husband is doing weight watchers at the moment and we mostly eat

  • Homemade soups, anything that doesn't have cream in it is pretty good
  • Fish with nice vegetable dishes. My DH is very keen on fish so we have various types (salmon, tuna, sea bass etc) in rotation but you could do any lean meat instead if you like. Mostly salads and veg are points free so we try to bulk up on them and I like to cook lots of interesting vegetable dishes for variety. DH is a big ratatouille fan so we do have that alot though.
  • Pasta in a tomato based sauce. The favourite is pancetta, red onion and aubergine fried till soft in a little olive oil in a tomato and chilli sauce. But again we vary the veg to stop ourselves dying of boredom.
  • Often I do vegetable curries with chappattis or rice. Most of the veg (cauliflower, onions, tomatoes, green beans) is points free but I do throw some chickpeas in to bulk it out. They do have some points but not too many.

These are the things we eat most often, but we also eat quite a lot of vegetable risottos, cous cous with veg, fajitas etc. The key things are to use lean meat, cut out the cheese and cream and bulk up on lots of vegetable.

Maybe if you could give us an idea of what your step father usually likes to eat we can think of some meals that would specifically appeal to him.
