Christmas Day veggie recipe for one!

Hi, got my family coming for the big day, 11 of us plus 1 brother who is strictly vegetarian, he usually eats everything with a M&S veggie substitute for the turkey! I would like to make him something, he is happy with roast potatoes etc, any ideas please?

A big Yorkshire pudding, filled with roasted vege and a nice veggie gravy?

A big field mushroom, stuffed with garlic and breadcrumbs and herbs and some cheese and roasted?

My OH is vegetarian and tbh he usually has something from M&S veggie range along with all the other bits for christmas dinner.

A big field mushroom is a good idea but my OH loves the roast potatoes and the stuffing etc more than the accompaniment iyswim.

I am a veggie as are two others coming for Xmas dinner - we are going to have a tarte tatin with gorgonzola and figs. Lst years I did one with pears and gorgozola and it was really nice with all the vegs as usual - but then I have meat substitutes. Otherwise a nice nut roast and cranberry sauce.

Thank you for your quick replies! I have bought nut roast before and the always look so dry and crumbly, did him a fild mushroom the other week, just stuffed it with caramelised red onion with balsamic vinegar. I fancy cooking him a tarte of some sort.

It might be too much faff just for one though - although it can be made well in advance and frozen. You could at least halve the quantities and make a smaller Wellington and use ready made puff pastry to make it easier.

Another idea would be roasted butternut squash. Cut it in half and scoop out the seeds. Pop in a bit of olive oil and S&P and roast until nearly done. Then add some softened onions, red peppers too if wished, pine nuts, thyme or rosemary and some cheese _ I use cream cheese but goats cheese would be good if he likes it - and roast a bit more.

I'm a veggie too. I'd opt for something like a tomato and goats cheese tart - relatively quick to do if you cheat and buy the pastry .

I'm a veggie and love all the 'trimmings' that everyone else has - I want to have the same Christmas dinner as everyone else but with a substitute for the meat. Assuming that that's what he wants too I would say the most important thing is to look at what you're replacing. You're taking out protein so want to replace that. You also want to avoid something that is primarily veg (there'll presumably be lots of that) or heavily carb based (tart etc OK but make sure it's fairly light on the pastry) as that can be too heavy if he wants the rest of the meal. You also want something that 'goes' with gravy etc. I hate being given something huge/very heavy or something that doesn't go with gravy and cranberry sauce because it stops me joining in with the rest.

Personally the best thing I ever have at Christmas dinners is veggie sausages. I don't mean Linda McCartney/quorn etc but nice homemade ones with cheese and nuts etc. Stilton and walnut works well and is very festive but you can try different flavours. Essentially we use a glamorgan sausage recipe and then vary it (you may want to practice first). Lots of protein, fits with the rest of the meal and you can make in advance, freeze and cook on day. We also did this delia one year but probably too much faff for one.

I must admit that last year I just did dauphinoisse, roasted vege, sprouts, savoy, stuffing etc and didn't bother with a 'main bit' replacement.

Will probably do the same this year - or the roast butternut squash I describe below - because carnivore dp likes that too.
