Have 2 pumpkins from my veg box and no idea what to do with them. Any suggestions gratefully received.

i like it roasted. makes a good base for curries as well.

I bought Leith's Vegetarian cook book so I could cook more interesting recipes with the veg I get in my vegbox. They do a nice carribean pumpkin curry, as well as Thai red curry. And squash lasagne.

Riverford have a good squash gnocchi recipe online, if you get bored of soups and curries. There's always pumpkin muffins!

Thanks moo and digital. I don't know why but I never think of looking on the Riverford website - although I religiously cut out the recipes they send each week and then leave them to clutter up the kitchen as I forget to use them. I made this pumpkin soup yesterday but only had 500g of pumpkin left so use potatoes and carrots as well. It was lovely but then I think anything with cream probably would be. Will try making it without cream again.

We've started making a HFW idea of stirring the chopped pumpkin in a frying pan in a mix of butter and oil for 15 mins till cooked then chucking in a large handful of chopped sage, thyme and garlic and cooking for a few more mins, season and serve.

Delicious.

soup! if they are mini you can take the tops off scoop out the seeds, roast them then put a cheese fondue inside...

I didn't add the sweet chilli in the end as it would have been too hot for the boys. My DS said it was delicious !

I can never peel pumpkin so cut it into wedges , roast it them peel it.

Thanks for all your suggestions. I've gone from thinking what shall I do with 2 pumpkins to no pumpkins and wondering if I can use the red Kabacha squash in this week's box for any of these recipes. No idea what a red Kabacha squash is like.
