Ds is mad on cheese so i wnat him to try lots of different cheeses.
dh bought him a cheese bourd from tesco and it has lots of nice stuff on it.
now, as a kid i was only ever allowed to have dairylee but not too much of it as it was too expensive apparently. Thus i am clueless.

so my question is about goats cheese. You know that white stuff around it, what is it and is it edible?
What else can i do with goats cheese, i think i have seen recipes with it in, but i just want to slap in on some nice bread or crackers.

Also, the stuff with the green stuff in it, i have tasted it and tis nice but a VERY strong cheese. dont think that ds will like it, so what can i do with it so its not wasted but tastes nice WITH other stuff.

I like goats cheese just on crackers the way you suggest. You can eat the white stuff!

Another nice way of using it is in a quiche: cut it into rounds and then do a layer of tomato slices, layer of goats cheese etc to the top (you'll need a whole 'log' of goats cheese). Pour over 4 eggs whisked with 1/2 pint milk and some thyme. Bake for 40 mins at 180c. Its done when the egg stuff isn't wobbly.

The strong cheese with the green stuff in it? I think this is blue cheese. A very nice and quick pasta dish is to add about 100g blue cheese, 1/2 pint milk, 1/2 tsp nutmeg and 1 tablespoon butter to a pan. Chop up a red pepper into small square and add that to the pan too. Heat gently until milk bubbles. Cook spaghetti until it is al dente (it will cook a bit more in the sauce), then add to sauce and heat through for a couple of mins. Really nice and creamy and not too strong!

Goats cheese is delicious and you can definitely eat the white stuff. By itself is good, it's also great in salads (not sure how big on salads DS is though?) . I like it on pasta with pesto, roasted tomatoes and avocado. Goats cheese also makes lovely tarts - take some ready rolled puff pastry and cut it into tart sized pieces. Score about 1cm round the edges. Then add some soft goats cheese (the welsh organic one from waitrose is excellent for this), a few fresh herbs (I like dill, chives or parsely) and top with slices of tomato. Then pour a little olive oil over the top and bake for about 25 minutes. To make it even more delicious, spread a thin layer of red pesto on to the pastry before you add the cheese and tomato. To make it "posher" serve with a few sprigs of rocket on top and a small drizzle of good quality balsamic vinegar. .

Blue cheese sauce goes very well with steak. Make a standard cheese sauce, but add blue cheese instead of regular cheese at the end - vary the amount of cheese according to how strong you want it to be - and serve with steak.

Have you tried him on things like Brie and Camembert? Good quality soft cheese is delicious, and so easy and tasty just on a cracker.

What a lovely mummy you are.
I would let him try all the cheese even the really strong smelly stuff, kids can really like super strong tastes.

Green stuff? Could it be herbs? Like a lovely garlicy roule, or is it a mouldy one like stilton?

White stilton with apricots is nice too. Not as sharp as the bluey greeny stuff.

Very often, you can get tiny sample packs of ifferent cheeses, about the size of a babybel, in a little bag. On the cheese shelf in the supermarket.

And any cheese tastes fab with grapes.

I love goats cheese! How about putting it on a pizza? It tastes lovely on pizza. Even if it is just a frozen one, you can just break the goats cheese off and pop it on top before putting it in the oven.
