I actually use 4 eggs for 24 individual - sometimes 5. No idea how much flour and liquid - I just mix it till it's the consistency of double cream. I also cook mine in lard - much, much better than oil.

Ah, only just seen all this! They are in the oven now, 2 eggs and goosed fat...

I suspect I may have over-filled the pans though. We'll see.

My one egg is just for a dozen. 2oz flour, 1/4 pt skimmed milk. Dripping from previous beef joint is best fat as it tastes good, can stand the temperature and costs nowt

Goose fat is from tins of confit de canard so also free. Although I've no idea why they put duck in goose fat.

Strictly speaking they are Dutch Yorkshire puds, cooked in French fat.
