Really quick and simple cake/biscuit recipes for Macmillan coffee morning please!

I am hosting a Macmillan coffee morning this Friday for about 10 mums and toddlers (15-18 months).

A couple of people are bringing cake contributions, although I don't know what. I would really like to provide homemade stuff but I am really pushed for time this week. I will be out on Thursday evening, too - which is even more of a pain!

Does anyone have any good, ultra-quick and easy recipes for something yummy I can serve up?! Thanks!

Hi - we had a coffee morning like this last week and the chocolate brownies went really quickly (delia's recipe) also Nigella's fridge cake (swirly chocolate top to make it look more professional) and her choc ornage cake (this needs to have the oranges boiled in advance, but once that's done the rest is really quick in the processor).

Hope the coffee morning goes well!

Littlefish's delicious flapjacks!

8oz butter
20z syrup
1 tblsp water
2 pinch bicarbonate of soda
4 oz plain flour
8 oz oats
8 oz sugar
pinch of salt

Grease and line a 10 x 8 tin
Pre-heat oven to 150 degrees (lower by 20 degrees for a fan oven.

Melt the butter, syrup, water and bicarb together in the microwave or on the hob.
Mix together the oats, sugar, flour and salt.
Add the dry mix to the butter/syrup/water/bicarb mix.
Add dried fruit, nuts, choc chips, crystallised ginger etc. and mix together

Cook for approximately 35 mins.
Cool in the tin for a bit and then remove before completely cold.
Cut into squares.

Freezes really well.

Good combinations:

Dates and crystallised ginger
Dates and chocolate chips
Cranberries and chocolate chips
Raisins and dried cherries
Date and dried apricots

Rice crispie buns are easy peasy and always yummy with dried fruit like raisins in them to make them (ever so slightly ) healthier.

Littlefish - they sound lovely! I am going to try that with the cranberries and choc chips.

There's a recipe for 'MrsBadger's Emergency Biscuits' in the recipe section. They are fab.

Looks very easy, tasty and very home-made!

They are truly delicious stickylittlefingers! Luckily they freeze, so I tend to freeze half of every batch so that they don't get snaffled straight away (usually by me )

I've just looked at the recipe above - it should say:

2oz syrup.

I would hate anyone to put in 20oz by mistake!!!!!

Thanks so much everyone!! This isn't really going to help my diet now, is it?!
