Does anyone recognise this tray bake?

My Mum used to make a tray bake which had crushed cornflakes, coconut and some other things in it. I think she baked it for a short while then added plain icing on top. I have taken a wild notion to have some.

I am wondering if anyone recognises the tray bake I mean? It came out sort of flapjacky rather than spongy.

No, I think you're talking about Australian Crunch. Have the recipe if needed.

I also have a recipe given to me by an Australian she called it Fudge Slice but may well be the same as shyandmighty. It involves cornflakes and coconut but is topped with chocolate - it is kind of flap jack like rather than cakey. It is really quick to make and quite yummy.

Yes, I think it is Australian Crunch (Mum called it cornflake surprise or something equally exotic).

Dd and I made it for the first time the other day and it is lovely.

225 g (8 oz) margarine
150 g (5 oz) caster sugar
75 g (3 oz) desiccated coconut
75 g (3 oz) crushed Cornflakes
1 x 15 ml spoon (1 tbsp) cocoa powder, sieved
150 g (5 oz) Be-Ro Self Raising Flour
100 g (4 oz) chocolate melted (optional)

  1. Heat oven to 180ºC, 350ºF, Gas Mark 4. Grease a Swiss roll tin 31 x 21 cm (12½ x 8 inch).
  2. Melt the margarine over a low heat.
  3. Stir in the sugar, coconut, cornflakes, cocoa and flour. Mix well.
  4. Turn into the tin and level with a knife. Bake for 20 minutes.
  5. When almost cold cut into squares or triangles.
  6. Cover with melted chocolate if wished.

Yes, that is mine too pretty much, except it is butter instead of marge and the measures are in cups and spoons. I am going to make it in the morning! Yummy.

Just an addition to this recipe...

I sometimes add a layer of peppermint icing and then the melted chocolate on top.

Or, I make peppermint custard to go with...very, very, lovely.

Saw this thread last week and realised we used to have this as kids. Then of course, I had to have some.

Mum managed to dig out her recipe, it's similar ingredients, but this is a no-cook version:

Crispie Cake
1 cup (teacup sized) plain flour
1 cup dessicated coconut
1 cup lightly crushed cornflakes
3/4 cup sugar
5oz butter, melted
icing sugar

Melt the butter and mix all the ingredients together.
Press into a greased tin.
Ice with glace icing while still warm.
