non buttercream( vom) icing for fairy type cakes please

so far i have melted butter choc and added icing sugar
dont know if it wil work in the NEW lakeland disposable icing bags i have bought

I've been to two parties recently where there have been cupcakes. The first one I assumed that they were bought (they weren't and were absolutely delicious). The second they were clearly homemade looked rather yukky and the host kept going on about their fabulousness .

What I use is chocolate ganache or cooked white icing or meringue icing, or creasm cheese frosting

Ok have just read the thread properly

Noah if you want to do impressive swirly icing then use chocolate ganache for chocolate icing, works best with dark chocolate and gold glitter sprinkled on, and for white icing do a cooked white icing (this is basically whipped up egg whites with sugar, so like a meringue but cooked) and lookes very impressive and tastes fantastic the older it gets as it turns from gooey to quite hard. Swirls look amazing. I will post you my recipe if you are interested.

I think nicest topping for fairy cakes is icing sugar made up with just lemon juice (or a mixture of lemon and orange juice) + smarties or jelly tots. Not a hint of buttercream or cream cheese or ganache in sight.

I'm with bibbitybobbityhat. I think a plate of cupcakes with plain white icing and a mix of decorations - inc. pastel coloured dolly mixtures, various other sweets, sugar flowers, silver balls, etc looks lovely. a bit like this

Italian meringue buttercream (less sweet and sickly and much lighter than tracditional buttercream) or chocolate ganache, or cream cheese (particularly good with carrot cake).

And to make the buttercream more delicious try adding something like fresh raspberry coulis (also helps to coulour the buttercream without nasty artificial food colourings).

This chocolate cake recipe is the one I use for my cupcakes, even though it is for a big cake it works really well for cupcakes, but they are more like chocolate brownies than spnge cakes (which is why I like them). They are rich and gooey and lovely and everyone loves them.

I find some chocolate sponge recipes so boring and dry and a bit tasteless.
