I have bought the October issue of Sainsbury's Magazine and there is a fab article on making cupcakes and lots of different flavoured frostings - the pictures are lovely - shall have to try them out now, just in time for the Macmillan Coffee Morning next week

Stirling - that's an interesting recipe. I've never made a cake with such a small proportion of butter to sugar and flour. I'll try it tomorrow!

Seeker - I thought that too. I couldn't believe it would work with such a small amount of butter, but they are lovely

But you'll be disappointed now, it's a very basic recipe, don't know if they meet the fake sponge criteria but they turn out quite nice, in an a reliable, nothing out of the ordinary sort of way:

100g/4oz butter
100g/4oz castor sugar
2 eggs
100g/4oz self-raising flour
milk to mix
vanilla essence

cream butter and sugar until light and fluffy. Add eggs and mix in.
Sift flour and fold in to butter mixture. Mix with a little milk to give a soft dropping consistency and add vanilla. Put into 12 paper cases and bake at 190 degrees/gas 5 for 10-15 mins.

I add choc chips then dust with icing sugar when cool to avoid faffing about with icing.

I have heard of buttermilk in scones or pancakes but not in cupcakes!

Martha stewart has a buttermilk one in her cupcake book, you might be able to find it on her website, unless you're looking for a specific one you've seen before.
