Any ideas? I have potatoes, cheese and eggs - what can I make that doesn't involve pastry?

What sort of potatoes, ie are they good to roast, to mash, bake , or new potatoes, etc...

Personally would leave the eggs for another day and just have a huge bowl of cheesy mash

Wow - thanks for so many responses so quickly. Will do a search for frittatas and tortillas. The potatoes are all purpose.

i agree with Tilly: cheesy mash.
have a hard boiled egg on the side, if you really need to use the eggs!

i'd say frittata too

or pan haggerty if you have onions

which is sliced onions and tatties, layered in a deep pan with melted butter and a dod of oil in, wih a great pile of grated cheese in the middle of the layers, or on top if you forgot! (i do that all the time!)

leave on hob with lid on and they sort of steam fry and the cheese is all gooey, you can shove it uunder the grill for a bit if you like the cheese to be toasty.

then you have eggs for an omlette tomorrow :D

i like lots of butter!!

not too much though, enought to make a decent sized puddle in the pan and the oil to stop it burning

and i usually give it about 40 mins on a low heat...although i have done it in the oven before...but you are less likely to get the lovely buttery brown crunchy bottom in the oven. [slurp]
