I have TONS of apples on our tree, what recipes are there for apples!?

...I've already made an apple crumble and DH made an apple sponge cake thing. We have loads still on the tree despite giving some away too, what else can we make? Thanks!

I make the following with our Bradley apple harvest when they are still relatively new harvested-+say to November
*dutch apple cake
*Dorset apple cake
*Eve’s pudding, crumble and pies
*apple Charlotte- good for using stale bread

  • baked apple
  • stir fried Cabbage cooked with apples- great with pork, ham, sausages *apple and pork casserole
  • a great Rick stein recipe with plaice and apples *normandy chicken *ham cooked in cider and apples *apple and elderberry jelly- usually have to make with windfalls before main harvest as elderberries ripe before Bramleys

Then when they are about to get a bit more stale

  • a apple and onion chutney- I make loads as it goes out to the whole family
  • lightly stew apple that I bag and freeze to use for puddings etc through the winter

In my childhood my mum and granny used to painstakingly wrap Bradley apples in newspaper during late autumn then store in cold dark shed on trays. They would last well into early summer as the waxy skin really keeps them moist and fresh- I don’t have space for it

And any bruised and battered ones get left out on the lawn in small batches to feed birds and badgers. One year the apples fermented and the birds got a bit drunk😱

Other alternative is leave out in bucket for neighbours or post on local Facebook- lots of people like me would collect to make chutney and then give you a couple of jars in return

We make cider.

And the usual things like crumble, pies, sauce etc. But making cider uses up all the rest including bruised ones.

APPLE BUTTER!!!

It’s amazing. Chop up washed apples (no need to peel), put in slow cooker with cinnamon (and sugar if they’re tart). Leave for hours and hours. Puree with hand blender in the pot.

You can stop here and keep it as apple sauce, freezes beautifully.

But don’t do that. Take the lid off the slow cooker and let it cook on. Again, for hours. It will get darker, thicker and sweeter. Stop whenever you get to the texture/sweetness you like. Put in jars or freeze.

You can use it for everything, hot or cold; on top of yoghurt, base for crumble/tart/pie, stir into porridge, spread like jam, in baking to reduce sugar. It’s amazing.

And it turns about 1kg of apples into one large jar!

Tons of recipes online. Tip; only add sugar to taste at the end for the last hour or so; the long cooking allows the sugars in the fruit to come out so it gets sweeter/more intense as it goes on

This apple torte recipe is really easy to make and is utterly delicious hot or cold. It’s one of those bakes that’s even better after 24 hours (but it’ll be hard to leave it that long,!).

Just mentioned this on another thread, but Delia Smith's pheasant with cream and apples. You can use guinea fowl, poussin or chicken if you can't get hold of a pheasant.
