When I was a kid I was given mashed potato with raw egg and I never knew until I saw the person putting the egg in the mash

I made mash with raw egg the other week and everyone liked it though I refused to say what the secret ingredient was.

Having just peeled the potatoes for todays mash to go on the fish pie, I am wondering whether it is a good idea actually to eat raw egg and whether it is okay for the kids too (aged 4-8)

my mum used to put an egg in cold leftover spud then fry uip slowly into kind of 1970s hash browns

still pretty tasty

I suspect they did it because I would never eat eggs, said I didn't like them but couldn't taste them in the mash.

I suspect it was a family thing (they weren't my family).

my mum used to make the best mash and it always had raw egg and milk and butter in it! i dont add egg to mine but it doesnt taste as good as my mums did and is nowhere near as fluffy as hers was!

If the mash is still hot when you add the egg it will end up cooked anyway but I wouldn't be too concerned feeding my child raw egg.

Yum. My mum never did mash until Smash was invented and she certainly put raw egg in that (well, you had to do something with it!).

I was eating smash with loads of butter when in labour with DD. I used to love it and was gutted when I could hardly eat. Haven't had it in ages though as I decided it was probably really bad for me.

My mum always made mash with egg, milk and butter (well, Stork SV) and it was delicious. I never knew it was not standard practice until I met DH, who looked at me like I was mad when I did it.

I only do it now when I am cooking the mash a la shepherds pie etc. But not because I am worried about salmonella, more out of frugality. I do find it helps to give the mash good texture if it is going to be cooked. You can do even better fork patterns with it, and that has to be worth an egg!

it is sooo much nicer with egg. I assumed the heat cooks it too.
egg, and a dash of either garlic olive oil, or truffle oil. Scrummy!

oooo - never had it with egg in mash before.......doing mash tonight might give it a try and see if anyone notices a difference.........

In belgium they always put an egg in the mash apparently. I was quite shocked as i had never seen this before....

My mum always did this too, I don't because I worry that I might poison the DC's, it never ocurred to me that the egg would cook in the hot potato. It always used to be egg, milk and butter and it was really good, much better than mine to be honest.

And I forgot that the pie goes in the oven to crisp up and heat through so the egg gets cooked then. Having just tasted the mash before it went in the oven, the egg definitely changes the consistency of the mash.

I am sure I have seen a recipe (could be Delia) where she puts just the egg yolk in to the mash - I have tried it and it is very nice!

Portofino - that's where I learnt to do it (who says Belgium is dull?) but it was only the yolk, butter and nutmeg.

yes, my mum put a yolk in.

She also used to put a raw egg into our chocolate milkshakes. We KNEW and still we would drink them!

I think if the mash is hot the egg cooks anyway so I don't really think there is any danger there providing the eggs are within their date!

I suspect adding a dash of cream would have the same effect though, whenever I've added cream to mine its always had comments......I've never used egg myself in mash potato, but I have used it when I've cooked filled potato skins, I scoop out the jacket potato, mix it with cheese, butter, egg, & season, then scoop it all back in, top with cheese and stick them back in the oven/under the grill. They taught us this recipe in Home Economics at school about 25 years ago and its still one of my favourite comfort meals......delicious!

ok so I tried this last night - no-one noticed the difference, and I didn't think it made it particularly outstanding either (obviously looking for the difference as I knew it was in there).
