Low cal, low fat food..?

My DP is a recovering anorexic, and is doing so so well. But he's struggling again, so I'm looking for some new recipes that he'd be able to manage without too much trouble. Vegetables, salmon, tuna and small amounts of pasta and rice are "safe" foods.

Any suggestions would be really really appreciated - he's being very hard on himself, and to keep him in his comfort zone right now is really important. Thanks everyone

what about things like avocado on ryvita with sesame seed spread, would he eat something like that?
does he need to put on weight with healthy foods or maintain his weight?

He probably needs to maintain - I don't think he could cope with putting on any more weight. He's up at eight and a half stone, and any more would probably be too difficult.

Asparagus soup
1 onion
1teasp garlic
500 gms asparagus
2 pints veg stock

put onions and garlic in a big sauce pan fry off for a bit 5 mins . add a bit of stock if it starts to stick . cut the woody ends off the asparagus and then chop up and add to pan . Then add asparagus and stock and simmer for 20 mins .
Liquidise well and tehn season .
no calories and not fat at this point . Add 30 gms of fromage fraise (sp) and this makes it a little bit creamy .
I love this soup its a ww recepi (big sp ) look for weight watchers recepies as theses are usually low fat and low calorie . best of luck .

Is he being supported by a dietician? Ideally one who specialises in eating disorders?

Notnowbernard, no, he's not seeing anyone. We did talk about it, but he wants to give it a shot by himself, and as he's doing so brilliantly, I think for now we'll leave it. Its difficult as it is worrying, but he's been trying so hard since I've been pregnant and I want to make this as easy for him as possible.

Stir-fried tofu? With broccoli and other veg.
Could he manage egg-fried rice?

My cousin was anorexic and found that she had to have control over what she ate, weighing portions and cooking it herself, and eating separately from her family, etc. So maybe preparing food together might be helpful?

How do you "do" tofu? I've never cooked it before!

Thanks for that. He seems quite content to either sit in the kitchen while I'm cooking, or just leaving it to me - I find that quite touching, its a trust thing.

You can either toss Tofu straight into a dish like noodles or egg fried rice, or a soy sauce/oyster sauce type thing. Perhaps you should look at stir frys as the ingredients retain their vital nutrients and since they stay crunchy your DP might feel better about eating them as they will seem less processed?

I lightly fry the tofu first in cold pressed rapeseed oil ( I use Hillfarms Oil as its extra virgin, has way more Omega 3 and vitamin C than Olive Oil AND it has half the saturated fat so your DP might feel re-assured by that?) just until its golden brown then I add it to my noodles/sauce/rice/stir fry or whatever. You could literally just buy a bag of stir fry vegetables then just add the Tofu to those with a little Soy sauce? Super healthy.....

Also eggs are good as they are high in protein so you could use egg or chicken instead of the tofu.....all high protein choices, which your DP should also feel better about

Thank you so much I've been doing stir fry on occasion, for exactly the reason you've suggested. He seems to enjoy it. Tonight I'm going to do vegetarian bolignaise, so that I have enough sauce for stuffed peppers tomorrow. But I might have a try with the tofu next week. If its that easy, I should be able NOT to mess it up too much!!!
