Made some for the first time using Nigella's recipe and they were awful - came out very doughy (and I did not over-mix). Anyone have a good one?

This classic scone recipe is good.

I always use the BeRo one www.be-ro.com/f_insp.htm

Turn out fine, not a fancy recipe though

Mmmm the photos on Stirling's link has made me want to go and make some!

I have a great scone recipe. but it's not traditional butter in flour scones...

2 cups plain flour
3.5 tsps baking powder
1/2 tsp salt
1/4 cup oil
2/3 cup milk
1 egg
1 tbsp sugar (or to taste)

mix it all up, plop it on a greased and floured baking tray bake at gas mark 4 until done!

they aren't nice and round and pretty but they taste good and are really easy to make!

Mine was the "rich scone" one, by the way!

I don't have a recipe to recommend but I remember my Grandma once saying that using slightly sour, on the turn milk made her scones much better.

Worth a try if you've milk to use up.

2 cups of flour
4 teaspoons of baking powder
Pinch of salt
50g of butter.

Rub butter into flour, make up to a sticky dough (DD's term) with about 2/3 cup of milk. Use a knife to mix the milk and flour, for some reason this works well. Swiftly knead the dough together, slap it into a slab about 1inch thick, cut into squares and bake in 220 degree oven for 10 - 15 minutes.

Cut edges raise better than rolled ones.

stripey - The classic scone recipe has buttermilk in it so maybe that is the same as your Grandma adding sour milk!

I must say that the insouciance of Slug's recipe really appeals.

Thanks all - am looking forward to using the clotted cream wasting away in my fridge!

Tis the Edmonds Cookbook one which every Kiwi girl knows. I started DD's cooking career at 18 months rubbing in the butter with this recipe.
