Does anyone make buns in individual prettily shaped muffin tins? What recipe do you use?

On a whim I bought a 12-hole muffin tin where the bottom of each hole is shaped like the petals of a rose (or possibly Sydney Opera House). Quite intricate.

But all my muffin recipes are quite lumpy, because nice muffins are lumpy. Who wants a smooth muffun? But lumpy won't work in the delicately shaped tin.

I thought maybe lemon and poppy seed would be good, but all the recipes I can find need an icing, and that made me wonder if they would be a bit dry without icing.

I need a good, not too dry, smoothish recipe for fairy cakes or muffins, that don't need icing.

why don't you just use a standard cake recipe

you know 6 flour 6 butter 6 sugar 3 eggs

Can you do them with a very thin icing and out it on while warm, then it wouldn't obscure the pattern?

I fancied doing something a bit more exciting than plain cake Sweetfall!

Johnny2 - not a bad plan. Lemon & Poppyseed with a very thin lemon icing drizzles on while warm might work. Hadn't thought of that.

Err... but not lemon and poppy seed.

Have just remembered that poppy seeds are illegal where I live.
