On a whim I bought a 12-hole muffin tin where the bottom of each hole is shaped like the petals of a rose (or possibly Sydney Opera House). Quite intricate.
But all my muffin recipes are quite lumpy, because nice muffins are lumpy. Who wants a smooth muffun? But lumpy won't work in the delicately shaped tin.
I thought maybe lemon and poppy seed would be good, but all the recipes I can find need an icing, and that made me wonder if they would be a bit dry without icing.
I need a good, not too dry, smoothish recipe for fairy cakes or muffins, that don't need icing.
Please
