Potato salad recipe without mayo anyone?

Not because I don't like mayo, but because the potatoes are boiling and I've just discovered I have no mayo. Nor do I have any spring onions. Only bought the bloody things because it was a pound for a big bag of new pots at the farm shop. Any suggestions?

I had a lovely one in a restaurant that I have been meaning to try and recreate. It tasted like the potatoes were dressed with olive oil and lemon juice. It had chopped gherkins and capers in it.
Any help??

Ah, but I wanted to dress the pots while they were still warm, so they soak up all the tasty goodness .

Quick Mayonnaise
1 whole egg

1 teaspoon sugar

3/4 teaspoon salt2 tablespoons lemon juice or vinegar 1 teaspoon mustard 3/4 cup oil

Add the seasonings and a half tablespoon of the acid to the egg. Pour in a fourth of the oil and beat together; continue adding oil a quarter at a time until all is used, beating between each addition, then add remainder of acid. Can be made in three minutes. The secret of adding oil quickly, without curdling, is using the WHOLE egg.

So, final outcome was: red wine vinegar and olive oil in a French dressing stylee, with wholegrain mustard, some microplaned garlic for that alium element, bit of sugar to take the edge off, lots of Maldon and, because I am odd, yet thrifty, and to introduce that desirable creamy element - the remains of a tub of hummus .

Quite tasty, very edible, but not as moreish as if I'd had mayo and spronions. Oh well, that's impulse buys for you. It'll do for nibbling and for DHs lunchbox!
