English mustard and crispy bacon in your cheese sauce, breadcrumbs and cheese on top, grilled.

Steam baby caulis or a whole head of cauli undivided, rather than separating into florets, for visual impact if it's 'serve yourself'.

More divine than a very divine thing.

make sure the cheese is mature - the mild stuff just doesn't do it

Huff - I laughed when I saw this after the other thread! :-)

I think any kind of cheese sauce dish is improved with a couple of thinly sliced pieces of tomatoe on top, under the sauce/cheese.

I always add "gritty" mustard (wholegrain) because I like the "bits".

Scatter the cauli with crispy bacon.

Good strongish cheese.

Breadcrumbs on top with grated cheese.

I like OhBling's idea of tomato slices. Must remember that for next time.

crunch up some cheese and onion or bacon crisps in the packet, then sprinkle over the top of your cauli cheese with some grated cheese before you pop in the oven to bake, goes yummy and crunchy

Eww at blue cheese.

Gauda would be nice. Do I mean Gauda or Emmental? The one Nigella uses in her Supper Onion Pie, which, by the way, is magnificent.

nutmeg's meant to be quite nice with cauli cheese, so I've heard.

Never tried it though. Snigger that sounds lovely, wish DH liked cauli...

Make the sauce with approx two thirds cheddar and one third parmesan for yummy cheesy sauce - oh, and lot's of black pepper.
The double cream in the milk idea sounds good, not sure about the bacon / tomatoes idea though.....

Drain the cauli until it is DRY and then drain it some more.

Yuk to watery cheese sauce.

I like to put scatter chopped boiled egg and par boiled onion slices on top of the cauliflower before adding the cheese sauce. Finish off with some course bread crumbs and some grated cheese.

Agree with others about using strong cheese hard cheese. I also put about half a teaspoon of curry powder in the cheese sauce.

Well it was fabulous.

Made a lovely white sauce with full cream milk and a tub of double cream. Forgot about mustard, but did put cayenne pepper in. I used cumin gauda and parmesan. Even put crisps on top - they worked okay!

Quite definitely the best cauliflower cheese I've ever made. Probably the most fattening too. Yummmmm.
