coriander glut - ideas for recipes?

Any ideas for using a huge amount of coriander, preferably to freeze - I was a bit over-enthusiastic in my sowing! I love it and add it to salads, curries, stir-fries etc. but it just keeps on growing. Is it possible to make coriander pesto - and if so, is it nice? Or anything else that's freezable?

coriander chutney for with curries/bhajia?

It jsut coriander blended with green chilli, lemon juice and sugar. For 4oz of coriander you want one chilli, a tbsp lemon juice (more if it is too thick), and a 1/4 tsp of sugar.

It is freezeable.

Thai curries can use large quantities of coriander can´t they.. you make the paste with a variety of herbs, coconut milk, lemongrass etc. and fry the meat in it..

Me too, mine always seems to get too wet and die off, it´s flattened out sadly next to some healthy basil as I write..

Well I've just made the coriander pesto and it was delicious!

Maria - I was expecting it to be difficult as I'd read it can be tricky. But I just bought a strip of plants from the garden centre and stuck them in (far too close together, hence the corinder hedge). They're in a raised veg bed, very light soil, in sun. Funnily enough my ordinary green basil next to the coriander isn't doing as well, though I've got a flourishing purple basil plant - not as nice as the green though.

I had a flatmate who made the most wonderful veg pakoras with loads of coriander leaf in them (along with diced spud, onion, maybe some spinach and the gram flour batter) - I don't have a recipe and I've never dared try it as I dont do deepfrying but they were absolutely fab.

Whenever I've tried coriander its bolted - suppose I should have tried to save the seed at least.

those pakoras described are punjabi ones, they are delicious.

Its 3 med pototoes, 3 smallish onions, 3 spring onions, bunch of spinach, 1 green chilli, handful of coriander, all chopped/diced quite small.
The batter is 200g gram flour, 50g s/r flour, 1/2 tsp chilli, tsp garamasala, salt, tbsp lemon juice then enough water to make a fairly thick batter.
Combine the batter with the veg, and drop spoonfuls into hot oil, fruy til potato cooked through, and nicely golden.

Not very healthy, but we make them once in a while for lunch and sometimes the kids have them in their lunchbox as a treat.

I thought of another recipe too, dania chicken! This sounds basic, but is lovely.

Btw Grimma, mine is trying to bolt but I just keep cutting the tops off and am winning so far - just! I've read it's not very long-lived though - think I'll have to plant more if I want it all summer.
